As the leaves turn and the air grows crisp, there’s nothing quite like the comforting embrace of pumpkin spice. This season, we’re taking our pumpkin obsession to a new level with a truly special dessert: these incredible **Grain-Free Pumpkin Cheesecake Bars**. Perfectly blending the rich, creamy texture of cheesecake with the warm, aromatic flavors of autumn, these bars are not just a treat for your taste buds, but also a thoughtful option for various dietary needs, being both gluten-free and lactose-free.

Whether you’re hosting a fall gathering, looking for a comforting treat for yourself, or simply want to bake something delicious that accommodates dietary restrictions, these pumpkin cheesecake bars are your answer. They deliver all the decadent flavor you expect from a classic cheesecake, but without the gluten or lactose, making them accessible and enjoyable for everyone at the table.

Embracing Dietary Needs with Delicious Dairy-Free Options

For those of us navigating dietary sensitivities, finding truly delicious alternatives can be a game-changer. After my Celiac diagnosis, I embarked on a journey to heal my gut, which included cutting out traditional dairy. It was one of the things I missed most, especially when it came to creamy desserts like cheesecake. Discovering high-quality lactose-free dairy products has been a revelation, and I am particularly thrilled about the offerings from Green Valley Creamery.

Their organic lactose-free dairy products have allowed me to reintroduce some of my favorite flavors into my diet without any discomfort. Their cream cheese, in particular, is a standout, providing the perfect tangy and rich base for this cheesecake. Instead of opting for something mundane, I knew their cream cheese deserved to shine in a recipe that screams fall celebration. And what better way to do that than with a luscious, layered pumpkin cheesecake?

Pecan crust and creamy cheesecake filling layers

Crafting the Perfect Base: The Pecan Crust

Every great cheesecake starts with an exceptional crust, and our pecan crust for these bars is truly something special. It’s similar in concept to the crust used in my paleo/vegan strawberry cheesecake bars, but adapted for baking, and the results are absolutely fantastic. This crust is naturally grain-free, offering a wonderful texture and nutty flavor that perfectly complements the creamy filling.

The base is a simple yet effective blend of raw unsalted pecans, pitted dates, solid coconut oil, almond flour, sea salt, and a touch of pumpkin pie spice. The pecans provide a rich, earthy flavor and a satisfying crunch when baked, while the dates act as a natural sweetener and binder, ensuring the crust holds together beautifully. Almond flour contributes to the grain-free structure, and the sea salt and pumpkin pie spice enhance the overall flavor profile, tying it seamlessly to the autumnal theme of the bars. I source my raw, unsalted pecans from Trader Joe’s, ensuring high quality and fresh flavor for the best possible crust.

The Star of the Show: Creamy Lactose-Free Cheesecake Filling

The heart of these pumpkin cheesecake bars is their incredibly smooth and flavorful filling. While you can certainly use regular cream cheese if lactose is not an issue for you, I wholeheartedly recommend Green Valley Creamery’s lactose-free cream cheese for a truly stomach-friendly experience. Their product performs beautifully in baking, delivering the signature tang and richness of traditional cream cheese without any dairy-induced discomfort. You can easily find a store near you using their convenient store locator.

The filling combines this fantastic lactose-free cream cheese with sugar (with an option for coconut sugar for a slightly deeper, caramel-like flavor, though note it will alter the color), pure vanilla extract, and eggs to create a velvety smooth base. A generous amount of pure pumpkin puree is then folded into half of this mixture, infusing it with that quintessential fall flavor and a beautiful orange hue. The trick to achieving distinct white and pumpkin layers, as seen in the photos, involves a clever freezing step. This ensures each layer sets individually, resulting in a visually stunning and delicious treat.

Achieving Picture-Perfect Layers

One of the most appealing aspects of these pumpkin cheesecake bars is their beautiful layered appearance. The key to achieving distinct, separate white cream cheese and pumpkin cream cheese layers is patience and a brief stint in the freezer. After spreading the first plain cream cheese layer over the pecan crust, it’s crucial to let it freeze for at least 1-2 hours. This firming-up period prevents the pumpkin layer from simply swirling into the white layer when poured on top. While a pumpkin swirl would still be delicious and visually appealing in its own right, if you’re aiming for those clean lines, this freezer step is non-negotiable.

Once both layers are in place and baked, the waiting game isn’t quite over. For the best possible texture, flavor, and ease of slicing, I highly recommend letting these bars sit in the fridge overnight after they have completely cooled. This extended chilling period allows the cheesecake to fully set and the flavors to meld beautifully, ensuring a firm yet creamy consistency. So, plan ahead and make these the night before your event or party – your taste buds (and your guests) will thank you!

Now that we’ve covered the ins and outs of these delightful bars, let’s get down to the baking! You’re just a few steps away from enjoying this perfect fall dessert.

These delightful pumpkin cheesecake bars are not only grain-free and gluten-free but also lactose-free! They are the quintessential dessert for your next fall celebration, offering rich flavors and a satisfying texture for everyone to enjoy.

Ingredients

Pecan Crust

  • 2 cups raw unsalted pecans
  • 7 pitted dates
  • ¼ cup coconut oil, in solid form
  • ⅓ cup almond flour
  • ¼ tsp sea salt
  • 1 tsp pumpkin pie spice

Cheesecake filling

  • 24 oz lactose free cream cheese, I used 3 – 8oz tubs, softened to room temperature
  • 1 cup sugar , can substitute coconut sugar, just note it will give the cheesecake a slightly browner color
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ¼ cup pumpkin puree, ensure it’s 100% pure pumpkin, not pumpkin pie filling

Pumpkin Spice Streusel Topping

  • ¾ cup almond flour
  • ½ cup coconut sugar
  • ⅓ cup ghee or coconut oil, melted if using coconut oil
  • 1 tbsp pumpkin pie spice

Instructions

  • Preheat your oven to 325°F (160°C). Lightly spray a 9×12 inch baking pan with coconut oil or your preferred cooking spray. Alternatively, line the pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later. This preparation ensures your crust won’t stick.
  • To make the pecan crust, combine all the pecan crust ingredients (raw unsalted pecans, pitted dates, solid coconut oil, almond flour, sea salt, and pumpkin pie spice) in a food processor. Pulse for about 1 minute, or until the mixture comes together to form a sticky, crumbly granola-like consistency. Transfer this mixture to your prepared baking pan and use your hands or the back of a spoon to firmly press it down, creating an even layer across the bottom of the pan. Place the pan in the freezer to chill while you prepare the cheesecake filling.
  • For the cheesecake filling, combine the softened lactose-free cream cheese, sugar (or coconut sugar), vanilla extract, and eggs in a large bowl. Using an electric mixer, beat the ingredients together until a creamy, smooth, and well-combined consistency is achieved. Be careful not to overmix, as this can incorporate too much air and lead to cracks in your cheesecake. Do not add the pumpkin puree yet.
  • Remove the pan with the chilled crust from the freezer. Carefully pour exactly half of the plain cream cheese mixture over the pecan crust. Use a spatula to gently spread it into an even layer, ensuring it covers the entire crust. Return the pan to the freezer. This crucial step helps create the distinct white layer.
  • Add the pumpkin puree to the remaining half of the cream cheese mixture in the bowl. Mix well until the pumpkin is thoroughly combined and the mixture has a uniform orange color.
  • Once the white cream cheese layer has set in the freezer for 1-2 hours (it should be firm to the touch), carefully remove the pan. Gently pour the pumpkin cream cheese layer evenly on top of the white layer. Bake the cheesecake for 30 minutes.
  • While the cheesecake is baking, prepare the streusel topping. In a medium bowl, combine the almond flour, coconut sugar, ghee or coconut oil (melted if using coconut oil), and pumpkin pie spice. Mix these ingredients with a fork or your fingertips until a crumbly mixture forms.
  • After the first 30 minutes of baking, remove the cheesecake from the oven. Evenly sprinkle the streusel mixture all over the top of the pumpkin layer. Return the pan to the oven and bake for an additional 30 minutes, or until the streusel is golden brown and the cheesecake is set with a slight jiggle in the center.
  • Once baked, remove the pumpkin cheesecake bars from the oven and allow them to cool completely at room temperature. This can take a couple of hours. Once fully cooled, transfer the pan to the refrigerator and chill overnight. This essential step ensures the bars are perfectly set, firm, and easy to slice, with flavors that have fully developed. Serve chilled and enjoy!

Notes

*If you’re not concerned about having distinct white and orange layers in your cheesecake bars, you can omit the freezer step after adding the first cream cheese layer. Simply combine all the cream cheese mixture with the pumpkin puree upfront and bake as a single pumpkin cheesecake layer on top of the crust. The flavor will still be wonderful!

Tips for Success and Variations

  • Room Temperature Ingredients: Ensure your lactose-free cream cheese and eggs are at room temperature. This helps them combine smoothly with the sugar and prevents lumps, resulting in a perfectly creamy filling.
  • Don’t Overmix: While you want a smooth filling, overmixing the cheesecake batter can incorporate too much air, which can lead to cracks in the finished product. Mix until just combined and smooth.
  • Cool Completely: Resist the urge to cut into the bars before they are completely cooled and chilled overnight. This is crucial for the cheesecake to fully set, making it easier to slice and enhancing the texture and flavor.
  • Storage: Store any leftover pumpkin cheesecake bars in an airtight container in the refrigerator for up to 5-7 days.
  • Freezing: These bars freeze beautifully! Once completely chilled and sliced, wrap individual bars tightly in plastic wrap and then aluminum foil. Store in an airtight container in the freezer for up to 2-3 months. Thaw in the refrigerator before serving.
  • Spice Adjustment: Feel free to adjust the amount of pumpkin pie spice in both the crust, filling, and streusel to suit your personal preference. Add a pinch of ground ginger or cloves for an extra kick.
  • Sweetener Options: While granulated sugar works well, coconut sugar can also be used for a slightly less refined sweetness and a hint of caramel flavor. Just remember it will darken the color of the cheesecake. Maple syrup could also be considered for the filling, though liquid sweeteners may alter the texture slightly.
  • Nut Substitutions: If pecans aren’t your favorite or are unavailable, walnuts or almonds can be used in the crust for a similar grain-free, nutty base.

Frequently Asked Questions

  • Can I use regular cream cheese? Yes, if you don’t have lactose sensitivity, you can certainly use regular full-fat cream cheese in this recipe. Ensure it’s softened to room temperature for the best results.
  • What if I don’t have pumpkin pie spice? You can make your own pumpkin pie spice blend! Combine 1.5 teaspoons ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground cloves for every 2.5 teaspoons of pumpkin pie spice called for.
  • Can I use canned pumpkin pie filling? No, it’s very important to use 100% pure pumpkin puree, not pumpkin pie filling. Pumpkin pie filling contains added sugars and spices that will alter the flavor and consistency of your cheesecake.
  • Why do the bars need to chill overnight? Chilling overnight allows the cheesecake to fully set and firm up, which is crucial for achieving a smooth, creamy texture and for clean, easy slicing. It also allows the flavors to deepen and meld together, enhancing the overall taste.
