Healthy Tuna Noodle Casserole: A Gluten-Free & Dairy-Free Reinvention of Classic Comfort Food
Few dishes evoke the warmth and nostalgia of childhood like a classic tuna noodle casserole. For many, it’s a quintessential comfort food, often synonymous with weeknight family dinners. However, traditional versions typically rely on canned cream soups, dairy, and regular pasta, which can be problematic for those with dietary restrictions or those simply seeking a healthier alternative. This recipe offers a modern, wholesome twist on that beloved classic, delivering all the familiar flavors and creamy texture you adore, but made entirely from scratch with “better-for-you” ingredients. Say goodbye to sluggish feelings and hello to a truly satisfying and nourishing meal!
Often referred to as Tuna Tetrazzini or a homemade rendition of Tuna Helper, this healthy tuna bake brings together tender pasta, a rich and velvety sauce, vibrant peas, and flaky tuna, all crowned with a crispy, grain-free topping. It’s the perfect solution for anyone craving that nostalgic taste without compromising on health or dietary needs. Whether you’re gluten-intolerant, dairy-sensitive, or simply looking to incorporate cleaner ingredients into your diet, this healthy tuna noodle casserole is a game-changer.
Why This Tuna Noodle Casserole is a Healthier Choice
Our healthy tuna noodle casserole stands out from its traditional counterparts by meticulously selecting ingredients that prioritize your well-being without sacrificing flavor. Here’s a closer look at what makes this recipe a truly wholesome option for your family:
- Gluten-Free Pasta: Instead of conventional wheat-based pasta, we use 100% brown rice noodles. Brown rice pasta provides a satisfying texture and a mild flavor that complements the dish beautifully, while offering whole grain benefits and being naturally gluten-free. This ensures that everyone can enjoy this classic comfort food, even those with gluten sensitivities or celiac disease. Other gluten-free pasta alternatives like lentil or quinoa pasta can also be used, adding even more protein and fiber to your meal.
- Homemade Dairy-Free Cream of Mushroom Soup: The cornerstone of traditional tuna casserole is often canned cream of mushroom soup, which frequently contains hidden gluten, dairy, soy, MSG, and artificial additives. Our recipe eliminates these concerns by featuring a simple, homemade cream of mushroom sauce. This luscious sauce is crafted from full-fat coconut milk, raw cashews, and quality chicken broth, creating an incredibly rich and creamy consistency that rivals its dairy-laden predecessors. While it requires a small extra step, the pure, clean flavors and the absence of inflammatory ingredients make it well worth the effort. You’ll feel energized and satisfied, not heavy or sluggish.
- Wholesome Protein: Tuna is an excellent source of lean protein and beneficial omega-3 fatty acids. By choosing high-quality, sustainably sourced tuna, you’re adding a nutritious boost to your meal.
- Fresh Vegetables: Incorporating fresh mushrooms, onions, garlic, and vibrant green peas ensures a good dose of vitamins, minerals, and fiber, enhancing both the nutritional profile and the flavor of the casserole.
- Grain-Free Topping: Instead of breadcrumbs or crackers, which often contain gluten, this recipe uses a unique grain-free pork panko topping, providing a delightfully crunchy texture that completes the dish.
This commitment to using real, unadulterated ingredients transforms a simple casserole into a truly nourishing and delicious meal that you can feel good about serving to your loved ones.

Essential Ingredients for Your Gluten-Free Tuna Bake
Crafting this delightful gluten-free and dairy-free tuna casserole requires a thoughtful selection of ingredients. While a detailed list with quantities can be found in the recipe section below, here’s an overview of the key components and tips for choosing the best ones:
- Quality Tuna: Opt for high-quality, wild-caught tuna packed in water or olive oil, avoiding those with added soy or vegetable oils. Brands like Wild Planet or Safe Catch are excellent choices, known for their sustainable practices and lower mercury levels. Always drain your tuna thoroughly before adding it to the casserole.
- Gluten-Free Pasta: Any shape of gluten-free pasta will work, but shells, elbows, or penne are particularly good for capturing the creamy sauce. Jovial Foods Gluten Free Shells, made from brown rice, are highly recommended for their excellent taste and texture, closely mimicking traditional pasta. You can find Jovial pasta in most grocery stores and online retailers like Thrive Market.
- Fresh Mushrooms: Cremini (baby bella) mushrooms offer a deeper, earthier flavor, but common white button mushrooms are perfectly fine. Slice them thinly to ensure even cooking and distribution throughout the sauce.
- Peas: Frozen peas are convenient and retain their vibrant color and sweetness. Simply thaw them before adding. Canned peas can also be used; just be sure to drain and rinse them well.
- Ghee or Vegan Butter: Ghee is clarified butter, meaning the milk solids have been removed, making it suitable for many with dairy sensitivities. For a completely dairy-free option, a high-quality vegan butter alternative works wonderfully.
- Dry Sherry: This ingredient is a secret weapon for adding incredible depth and a complex, savory flavor to the mushroom sauce. A good quality cooking sherry can be found in most grocery stores. If you prefer to omit alcohol, a splash of vegetable broth with a teaspoon of apple cider vinegar can be a substitute, though the flavor profile will be slightly different.
- Chicken Broth: The quality of your broth significantly impacts the overall flavor. Brands like Kettle & Fire offer excellent, clean-ingredient options. You can also use homemade chicken bone broth for added nutrients, or vegetable broth for a vegetarian option.
- Full-Fat Coconut Milk: This is crucial for the creamy base of our homemade soup. Look for full-fat canned coconut milk (not the refrigerated beverage cartons). The thick, creamy part at the top of the can is what you’ll primarily use for richness.
- Raw, Unsalted Cashews: These form the creamy backbone of our dairy-free sauce. Soaking them in hot water for at least 15-30 minutes (or overnight in cold water) before blending will ensure an ultra-smooth and silky cashew cream. Find them on Amazon, Thrive Market, or at Trader Joe’s.
- Pork Panko (or alternatives): For that perfect crispy topping without grains, Pork Panko is an innovative and delicious choice. If you can’t find it, don’t worry! Crushed gluten-free crackers, potato chips (for a salty crunch), or even regular crushed pork rinds make fantastic substitutes.
- Aromatics and Seasonings: Fresh onion and garlic provide the aromatic base, while dried thyme and sea salt bring the flavors together beautifully. Freshly ground black pepper is also a welcome addition.
Step-by-Step Guide to Making Dairy-Free Tuna Noodle Casserole
Creating this healthy, dairy-free, and gluten-free tuna noodle casserole is a straightforward process that yields incredibly delicious results. Follow these detailed steps to bring this comforting dish to life:

- Prepare Your Oven and Dish: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish. This ensures your casserole won’t stick and makes for easier cleanup.
- Cook the Gluten-Free Pasta: Bring a large pot of salted water to a rolling boil. Add your chosen gluten-free pasta and cook it for 3-4 minutes LESS than the package instructions recommend. For instance, if the package suggests 12 minutes, aim for 8-9 minutes. This crucial step prevents the pasta from becoming mushy, as it will continue to cook and absorb flavors in the oven. Drain the pasta well and set aside.
- Sauté the Aromatics and Mushrooms: In a large skillet (a 12-inch skillet is ideal), melt the ghee or vegan butter over medium heat. Add the chopped mushrooms, diced onion, and minced garlic. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and the mushrooms have released their moisture and started to brown slightly. This develops a rich flavor base.
- Deglaze with Sherry: Pour in the sherry, scraping up any browned bits from the bottom of the pan. This deglazing step adds tremendous depth and complexity to the sauce. Stir well to combine the flavors.
- Simmer the Broth and Spices: Add the chicken broth, dried thyme, and sea salt to the skillet. Bring the mixture to a gentle boil, then reduce the heat to medium-low and let it simmer. This allows the flavors to meld beautifully while you prepare the cashew cream.
- Make the Silky Cashew Cream: In a high-speed blender, combine the full-fat coconut milk (using the thick, creamy part), raw cashews (preferably pre-soaked), water, lemon juice (or apple cider vinegar), and a pinch of sea salt. Blend on high for 1 minute, or until the mixture is incredibly smooth and creamy with no visible cashew bits. This homemade cashew cream is the secret to the casserole’s luxurious, dairy-free texture.
- Thicken the Sauce: Pour the blended cashew cream into the simmering skillet with the mushroom mixture. Stir continuously over medium heat. The sauce will begin to thicken and bubble within 1-2 minutes, transforming into a rich, velvety consistency.
- Incorporate Tuna and Peas: Gently fold in the drained and flaked tuna along with the thawed peas into the thickened sauce. Stir until all ingredients are evenly distributed and coated in the creamy sauce.
- Combine and Transfer: Add the slightly undercooked, drained gluten-free pasta to the skillet with the tuna and sauce mixture. Stir everything together thoroughly, ensuring every piece of pasta and tuna is coated. Alternatively, you can transfer the pasta to the casserole dish first and then pour the sauce over it, mixing gently.
- Add the Topping and Bake: Transfer the entire mixture to your prepared 9×13 inch casserole dish. Evenly sprinkle the pork panko (or your chosen alternative like crushed gluten-free crackers or potato chips) over the top.
- Bake to Perfection: Bake in the preheated oven for 25 minutes, or until the casserole is bubbling around the edges and the topping is golden brown and crispy.
- Serve and Enjoy: Remove from the oven, let it cool for a few minutes to set, then serve hot. Enjoy this incredibly comforting and healthy tuna noodle casserole!

Frequently Asked Questions & Expert Tips for Your Tuna Noodle Casserole
Can You Make This Tuna Noodle Casserole Nut-Free?
Absolutely! To make this healthy tuna noodle casserole completely nut-free, you can easily omit the cashew cream. Instead, here’s a simple method to achieve a creamy, thickened sauce: In a separate bowl, whisk together 1 tablespoon of arrowroot powder (or cornstarch) with 2 tablespoons of cold water to create a slurry. After adding the chicken broth and spices to the skillet, bring it to a boil, then stir in 1 cup of full-fat coconut milk (or a nut-free plant-based milk like oat milk) along with 1 teaspoon of lemon juice or apple cider vinegar. Once that mixture is simmering, gradually whisk in the arrowroot slurry. Continue to stir over medium heat until the sauce thickens to your desired consistency. While it may not have the exact richness of the cashew cream, it will still be wonderfully flavorful and comforting!
Is This Tuna Noodle Casserole Keto or Low-Carb Friendly?
As written, this healthy tuna noodle casserole is not suitable for a strict ketogenic diet because it uses brown rice pasta, which is carbohydrate-rich. However, you can easily adapt it to be low-carb or keto-friendly by making a simple substitution for the noodles. Instead of 12 ounces of gluten-free pasta, incorporate an equivalent amount (about 12 ounces) of low-carb vegetable noodles. Excellent options include spiralized zucchini (zoodles), hearts of palm pasta, or even thinly sliced cabbage noodles. Simply sauté these veggie noodles until tender-crisp before combining them with the sauce and tuna mixture. This modification allows you to enjoy the delicious flavors of the casserole while adhering to a low-carb lifestyle.
How to Store and Freeze Your Healthy Tuna Casserole
- Refrigeration: Leftover gluten-free tuna casserole can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until warmed through.
- Freezing for Later: This casserole freezes beautifully, making it an excellent option for meal prep. To freeze, bake the casserole according to the instructions, then allow it to cool completely to room temperature. Once cooled, cover the dish tightly with plastic wrap, followed by aluminum foil, ensuring no air can get in. Label with the date and freeze for up to 3 months.
- Thawing and Reheating: When you’re ready to enjoy, transfer the frozen casserole to the refrigerator and thaw overnight. Once thawed, remove the plastic wrap, keep the foil on, and bake in a preheated oven at 350°F (175°C) for about 20-30 minutes, or until heated through. You might remove the foil for the last 5-10 minutes to re-crisp the topping if desired. Gluten-free pasta tends to hold up well in sauces like this when frozen and reheated, offering a surprisingly good texture.
Meal Prep Tips for Busy Weeknights
To make weeknight dinners even easier, you can prepare several components of this healthy tuna noodle casserole in advance:
- Homemade Cream of Mushroom Sauce: Prepare the cashew cream sauce up to 2-3 days ahead of time and store it in an airtight container in the refrigerator. Reheat gently on the stovetop before combining with other ingredients.
- Cooked Pasta: Cook your gluten-free pasta al dente and lightly toss with a touch of olive oil to prevent sticking. Store in the fridge for up to 2 days.
- Sautéed Vegetables: Chop and sauté the mushrooms, onion, and garlic. Store in the refrigerator for 2-3 days.
On the day you plan to serve, simply combine your prepped ingredients, add the tuna and peas, and bake! This cuts down significantly on active cooking time, allowing you to enjoy a wholesome, homemade meal with minimal fuss.
Serving Suggestions to Complete Your Meal
While this healthy tuna noodle casserole is a complete meal on its own, it pairs wonderfully with a variety of side dishes:
- A fresh, crisp green salad with a light vinaigrette.
- Steamed or roasted green vegetables like asparagus, broccoli, or green beans.
- A side of crusty gluten-free bread for soaking up any extra sauce.
