Exquisite Moroccan Chicken: A Gluten-Free & Dairy-Free Culinary Journey

Prepare your taste buds for an unforgettable culinary journey! This Moroccan Chicken recipe is truly an experience, and it’s all about that sensational sauce – seriously, the sauce for this Moroccan Chicken is nothing short of AMAZING! It transports me back to cherished memories of the unbelievable meals our dear friend, Mrs. Ameena, used to lovingly prepare for our family. When I was a teenager, my family had the incredible opportunity to host a Moroccan family at the Naval War College for a year. This immersive experience allowed us to learn about the vibrant Moroccan culture firsthand, forging new and lasting friendships.

At the heart of any culture lies its food, and Mrs. Ameena was a masterful chef. She cooked astonishing Moroccan meals that left a lasting impression on my palate and my heart. The rich, complex flavors, the warmth of the spices, and the inviting aromas filled our home, creating a truly authentic Moroccan experience. It was during this time that I developed a deep appreciation for the unique blend of sweet, savory, and tangy notes characteristic of Moroccan cuisine.

Inspired by those treasured memories, I knew I wanted to recreate one of my favorite Moroccan dishes, while also ensuring it was both gluten-free and dairy-free. This led me to explore ingredients that could deliver authentic flavor and texture, yet fit modern dietary needs. Integrating Path Of Life’s Garbanzo Beans and Lentils into this recipe proved to be a brilliant choice. Their blend of white and green garbanzo beans, coupled with green and red lentils, all subtly seasoned with extra virgin olive oil, garlic, and basil, perfectly complements the deep, savory notes of the Moroccan sauce. This thoughtfully prepared mix adds not just convenience but also a wonderful depth of flavor and texture that elevates the entire dish, reminiscent of traditional Moroccan stews.

The Perfect Accompaniment: Path of Life Organic Quinoa & Brown Rice

To complete this delightful Moroccan Chicken dish, a balanced and wholesome side is essential. Path of Life’s blend of organic brown rice and perfectly cooked organic red quinoa serves as an ideal accompaniment. I particularly adore the combination of the nutty quinoa with the comforting brown rice. It’s lightly seasoned with salt and garlic, boasting both an excellent texture and a subtle flavor profile that doesn’t overpower the main course, but rather enhances it. This makes it an incredibly versatile and convenient base for soaking up every last drop of that incredible Moroccan sauce.

Effortless Exotic Flavors: A Simple Moroccan Chicken Recipe

Don’t be intimidated by the seemingly exotic appearance of this dish. Despite its gourmet appeal, this Moroccan Chicken recipe is surprisingly simple to make, especially with the added convenience of Path of Life’s frozen all-natural and organic vegetables. You’ll find that many of the aromatic spices required for the rich sauce are likely already staples in your pantry, making this a perfect opportunity to explore new flavors without extensive shopping.

The magic truly lies in the harmonious blend of spices: warm cinnamon, earthy cumin, vibrant turmeric, pungent garlic, and smoky paprika. Each spice plays a crucial role, contributing layers of depth and complexity that define Moroccan cuisine. Turmeric, in particular, not only lends its beautiful golden hue but also brings a host of well-documented health benefits, including anti-inflammatory properties. These simple, yet powerful, ingredients combine to create an extraordinary culinary delight that is both incredibly flavorful and wonderfully nutritious. The careful balance of these spices, alongside the bright zest of lemon and the sweetness of honey and raisins, transforms ordinary chicken thighs into a dish that feels special and comforting all at once. It’s an easy weeknight meal that tastes like it took hours to prepare.

Moroccan Chicken is a savory dish made with an aromatic blend of cinnamon, cumin, turmeric, garlic, paprika, and lemon. Chicken thighs are smothered in an exotic sauce with garbanzo beans, lentils, onions, and raisins, creating a rich and satisfying meal.

Ingredients

  • 6 chicken thighs, skin on
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • 1 large sweet onion, chopped
  • 2 tablespoons fresh minced garlic
  • 1 tablespoon turmeric
  • 1 tablespoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice
  • 4 tablespoons honey
  • 1 tablespoon gluten-free flour (rice flour preferred)
  • 3 cups gluten-free chicken broth or bone broth (or gluten-free bouillon)
  • 1/2 cup raisins
  • 2 packages of Path of Life Garbanzos and Lentils
  • 1 package of Path of Life Organic Quinoa and Brown Rice

Instructions

  1. In a large pan or Dutch oven, heat the olive oil on high heat.
  2. Season both sides of the chicken thighs generously with salt and freshly ground black pepper.
  3. Place the seasoned chicken thighs in the hot pan, skin-side down, and cook until they are beautifully crispy and golden brown on both sides. This usually takes about 5-7 minutes per side. Once browned, remove the chicken and transfer to a separate plate; set aside.
  4. Reduce the heat to medium-high. Add the chopped sweet onion and minced garlic to the pan, stirring occasionally. Sauté for about 5 minutes, or until the onions have softened and become translucent, and the garlic is fragrant.
  5. Stir in the aromatic spices: turmeric, cumin, cinnamon, and lemon zest. Cook for another minute, stirring continuously, to allow the spices to bloom and release their full aroma.
  6. Pour in the gluten-free chicken broth (or bone broth), lemon juice, and honey. Whisk in the gluten-free flour until no lumps remain and the mixture is fully combined, creating a slightly thickened base for your sauce.
  7. Return the crispy chicken thighs to the pan, nestled into the sauce. Bring the sauce to a gentle simmer, then cover the pan with a lid. Reduce the heat to low and let it simmer for 15 minutes, allowing the chicken to cook through and absorb the rich flavors.
  8. After 15 minutes, remove the lid. Add the two packages of Path of Life Garbanzos and Lentils, along with the raisins, to the pan. Stir gently to ensure everything is well combined with the sauce.
  9. Continue to cook uncovered for an additional 15-20 minutes, or until the sauce has thickened to your desired consistency and the chicken is fork-tender. This also allows the flavors to meld beautifully and the garbanzos and lentils to warm through.
  10. While the chicken is simmering, prepare the Path of Life Organic Quinoa and Brown Rice according to the package directions. It typically heats in just a few minutes, making it a quick and easy side.
  11. To serve, place a generous portion of the quinoa and brown rice on a plate, then top with the Moroccan chicken and plenty of that glorious sauce.
  12. Garnish with fresh cilantro or an extra slice of lemon for a final touch of brightness.
  13. Enjoy this incredibly flavorful and satisfying meal!
