This dish was perfect comfort food for a cold fall night! I made this for my daughter, who is GF/DF, and she LOVED it. I blended and added a third can of garbanzo beans for additional thickness and used straight coconut cream in place of the heavy cream. I made it the night before, so that also thickened everything up and allowed all the flavors to mingle around and get extra delicious! 🙂 Served over Jasmine rice, it was chef’s kiss! Thank you for this keeper!

It’s proof that wholesome, delicious meals don’t have to be complicated or time-consuming.

Essential Ingredients for Creamy Marry Me Chickpeas

Crafting this flavorful chickpea dish requires a thoughtful selection of ingredients, each playing a crucial role in building the signature creamy Tuscan sauce and robust texture. Here’s a detailed look at what you’ll need and why:

  • Chickpeas: The star of our vegetarian show. Two 15-ounce cans, thoroughly drained and rinsed, provide a hearty, protein-packed base that makes this dish incredibly satisfying. Chickpeas are a fantastic source of fiber and plant-based protein, offering a delightful chewiness that holds up beautifully in the creamy sauce.
  • Shallot: Finely diced, shallots bring a delicate, sweet, and savory aromatic foundation to the sauce. They are milder than onions but offer a more nuanced flavor, enhancing the overall richness without overpowering other ingredients.
  • Garlic: An indispensable ingredient for any savory dish, minced garlic infuses the sauce with its classic pungent and aromatic essence, deepening the flavor profile significantly.
  • Red Pepper Flakes: For those who appreciate a touch of warmth and subtle spice, red pepper flakes add a gentle kick that beautifully balances the sweetness of the cream and tomatoes. Feel free to adjust the amount or omit entirely based on your preference.
  • Oregano & Thyme: These dried herbs are the backbone of the Mediterranean-inspired flavor. Their earthy, slightly peppery notes are essential for creating that authentic Tuscan taste. An Italian seasoning blend can also be used as a convenient alternative.
  • Unsalted Butter: Butter contributes a luxurious richness and velvety texture to the sauce. While unsalted butter allows for better control over the dish’s seasoning, salted butter works perfectly fine if that’s what you have. For a dairy-free or vegan option, a high-quality vegan butter substitute can be used.
  • Tomato Paste: A small but mighty ingredient, tomato paste provides a concentrated burst of deep, savory, umami-rich tomato flavor, adding complexity and depth to the sauce.
  • Sun-dried Tomatoes: These intensely flavored tomatoes, often packed in oil, offer a much richer, sweeter, and tangier taste compared to fresh tomatoes. They are pivotal in building the vibrant Tuscan character of the sauce. Dicing them small helps distribute their flavor throughout the dish.
  • Vegetable Broth: Low-sodium vegetable broth forms the liquid base of our creamy sauce, ensuring a flavorful foundation without excessive salt. It helps to bring all the ingredients together into a harmonious blend.
  • Heavy Cream: The key to the luscious, creamy texture of this dish, heavy cream adds a delightful richness and a subtle sweetness that balances the acidity of the tomatoes and the savory spices. For a dairy-free alternative, full-fat canned coconut milk can be substituted, offering a similar creaminess with a hint of coconut flavor.
  • Parmesan Cheese: Grated Parmesan cheese provides a salty, umami-packed finish, melting into the sauce to add an extra layer of savory depth. A little extra for serving is always a good idea!
  • Spinach: Fresh spinach is wilted directly into the hot sauce, adding a vibrant green color, a touch of earthiness, and a boost of healthy vegetables. It’s an easy way to sneak in extra nutrients.
  • Fresh Basil: A garnish of fresh, finely chopped basil brightens the entire dish with its sweet, aromatic, and slightly peppery notes, providing a fresh contrast to the rich sauce.

Expert Tips for Perfect Marry Me Chickpeas

Achieving restaurant-quality results with your Marry Me Chickpeas is easier than you think, especially with a few insider tips:

  • Leverage Sun-dried Tomato Oil: When sautéing your shallots and garlic, consider using a tablespoon of the oil from your jar of sun-dried tomatoes instead of, or in addition to, the olive oil. This simple trick infuses the dish with an extra layer of rich, concentrated tomato flavor right from the start, significantly enhancing the depth of your sauce.
  • Thicken Naturally: If you desire a thicker sauce with added texture, gently mash a small portion (about ¼ to ½ cup) of the chickpeas directly in the pan before adding the broth and cream. The starches released from the mashed chickpeas will naturally thicken the sauce as it simmers, providing a more robust consistency.
  • Rest for Flavor Development: Patience is a virtue, even with quick meals. Allowing your Marry Me Chickpeas to rest for about 10 minutes off the heat before serving can make a noticeable difference. This brief resting period allows all the incredible flavors to meld and deepen, and the sauce to thicken slightly to its ideal consistency.
  • Customizing Spice: The red pepper flakes offer a gentle warmth. If you prefer more heat, increase the quantity. For a completely mild dish, you can omit them entirely without compromising flavor.
  • Dairy-Free Adaptation: As mentioned in the ingredients, full-fat canned coconut milk is an excellent substitute for heavy cream. Ensure you use full-fat for the best creamy texture. For a truly dairy-free option, use vegan butter and a dairy-free Parmesan alternative.
  • Pan Choice Matters: A wide, shallow saucepan or a Dutch oven is ideal for this recipe. It allows for even cooking and proper evaporation of liquids, which is crucial for the sauce to thicken correctly.

Serving Suggestions for Every Occasion

This versatile Marry Me Chickpeas dish can be enjoyed in various ways, fitting perfectly into any meal plan, whether you’re hosting guests or enjoying a quiet dinner at home.

  • Appetizer Perfection: Serve it as a decadent appetizer alongside warm, crusty bread. A gluten-free baguette or gluten-free flatbread is ideal for soaking up every last drop of the luscious, creamy sauce. The rich flavors make it an instant crowd-pleaser.
  • Hearty Main Course: For a complete and satisfying meal, spoon the Marry Me Chickpeas over a bed of fluffy rice, quinoa, or delicate orzo pasta. The grains or pasta beautifully complement the sauce and chickpeas, creating a well-rounded dish that’s both filling and delicious. Consider adding a simple side salad for a touch of freshness.
  • Pair with Roasted Vegetables: Enhance the nutritional value and texture by serving it alongside roasted broccoli, asparagus, or cherry tomatoes. The vibrant flavors of roasted vegetables would pair wonderfully with the creamy sauce.
  • As a Side Dish: It can also serve as a flavorful side dish to grilled halloumi cheese or a simple green salad for a lighter meal.

Storage and Meal Prep Made Easy

One of the many advantages of this Marry Me Chickpeas recipe is how well it stores, making it an excellent candidate for weekly meal prep. Leftovers are just as delicious, if not more so, as the flavors continue to meld and deepen over time.

Store any leftover Marry Me Chickpeas in an airtight container in the refrigerator for up to 5 days. This ensures its freshness and flavor are maintained. When you’re ready to enjoy it again, simply reheat it in the microwave for 1-2 minutes, or gently warm it on the stovetop over medium-low heat, stirring occasionally, until the sauce is warmed through. You might need to add a splash of vegetable broth or water to loosen the sauce if it has thickened too much in the fridge. Its ease of storage and reheating makes it a perfect grab-and-go lunch or a quick dinner solution after a busy day.

The Nutritional Powerhouse of Chickpeas

Beyond their delicious taste and versatility, chickpeas are nutritional champions, making this “Marry Me Chickpeas” dish not just a treat for your taste buds but also a boost for your health. These humble legumes are an excellent source of plant-based protein, crucial for muscle repair and growth, and dietary fiber, which aids in digestion, promotes a feeling of fullness, and helps regulate blood sugar levels. They are also rich in essential vitamins and minerals, including folate, iron, phosphorus, and B vitamins, all contributing to overall well-being. Incorporating chickpeas into your diet, especially in such a flavorful and easy recipe, is a smart way to enjoy a hearty, satisfying, and health-conscious meal.

This creamy chickpea dish is a quick and easy vegetarian twist on the popular marry-me chicken. It’s both light and indulgent, requiring only one pan and less than 20 minutes to prepare.

Ingredients

  • 2 15oz cans chickpeas, drained and rinsed
  • 1 small shallot, finely diced
  • 2 cloves garlic, minced
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • ½ tsp oregano
  • ¼ tsp thyme
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tbsp tomato paste
  • â…” cup sundried tomatoes, diced
  • 1 cup vegetable broth or stock
  • 1 cup heavy cream
  • ½ cup parmesan cheese, + extra for serving
  • 3 cups spinach, loosely packed
  • 2 tbsp fresh basil, finely chopped

Instructions

  1. In a large saucepan or Dutch oven, add the olive oil and unsalted butter. Cook over medium heat until the butter is melted and bubbly. Stir in the finely diced shallot and minced garlic, and sauté until softened, which usually takes about 2-3 minutes.
  2. Add the diced sun-dried tomatoes, ¾ tsp salt, ½ tsp black pepper, ½ tsp red pepper flakes, ½ tsp oregano, and ¼ tsp thyme to the pan. Stir well to combine all the ingredients and allow the spices to toast lightly, enhancing their aroma and flavor.
  3. Whisk in the 1 tbsp tomato paste, ensuring it is fully incorporated. Then, add the drained and rinsed chickpeas, 1 cup vegetable broth, and 1 cup heavy cream. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 5-6 minutes, or until the sauce has thickened slightly to your desired consistency.
  4. Turn off the heat. Stir in the 3 cups of fresh spinach until it has completely wilted into the sauce. Finally, fold in the 2 tbsp fresh basil and ½ cup Parmesan cheese just before serving. The sauce will continue to thicken as it cools.

Notes

  • For an extra layer of rich, tomato-infused flavor, consider sautéing the shallots and garlic in the oil from your sun-dried tomato jar.
  • To achieve a thicker sauce or add more texture, gently mash a small portion of the chickpeas directly in the pan before adding the liquid ingredients.
  • Allow the Marry Me Chickpeas to rest for about 10 minutes after cooking. This brief period allows the flavors to fully meld together and the sauce to reach its optimal thickness.
  • Store any leftover Marry Me Chickpeas in an airtight container in the refrigerator for up to 5 days, making it an excellent option for meal prep. Reheat in the microwave for 1-2 minutes or on the stovetop until warmed through, adding a splash of broth if needed.

How to Make Marry Me Chickpeas Step-by-Step

Let’s walk through the simple steps to create this incredible one-pan Marry Me Chickpeas dish, complete with visual guidance to ensure perfect results every time.

minced garlic and chopped shallot sautéing in white pot

Step 1: Sauté Aromatics. Begin by placing a large saucepan or Dutch oven over medium heat. Add 1 tablespoon of olive oil and 1 tablespoon of unsalted butter. Allow the butter to melt and become bubbly. Once ready, add 1 small, finely diced shallot and 2 cloves of minced garlic. Sauté these aromatics for about 2-3 minutes, stirring occasionally, until they become fragrant and softened. This forms the foundational flavor layer of your sauce.

Step 2: Add Sun-dried Tomatoes and Spices. To the sautéed aromatics, add ⅔ cup of diced sun-dried tomatoes, ¾ teaspoon of salt, ½ teaspoon of black pepper, ½ teaspoon of red pepper flakes (if using), ½ teaspoon of dried oregano, and ¼ teaspoon of dried thyme. Stir these ingredients thoroughly to combine them. Allow the spices to toast gently for about 30 seconds to a minute, which helps to release their full aromatic potential and integrate them with the rich sun-dried tomato flavor.

Step 3: Build the Creamy Sauce. Whisk in 1 tablespoon of tomato paste until it’s fully blended with the other ingredients. Next, add the 2 cans of drained and rinsed chickpeas, 1 cup of vegetable broth, and 1 cup of heavy cream. Stir everything together gently. Bring the sauce mixture to a boil, then immediately reduce the heat to low and let it simmer. Continue simmering for about 5-6 minutes, or until the sauce has thickened slightly to a luscious consistency. Stir occasionally to prevent sticking and ensure even cooking.

Step 4: Finish and Serve. Once the sauce has thickened, turn off the heat. Stir in 3 cups of fresh spinach, allowing it to wilt into the warm sauce. The heat from the pan will be sufficient to cook the spinach perfectly. Finally, mix in 2 tablespoons of fresh basil and ½ cup of grated Parmesan cheese. Stir until the cheese is melted and distributed. Serve your creamy Marry Me Chickpeas warm, perhaps over a bed of orzo or with a side of crusty bread to scoop up every bit of that delectable sauce. Enjoy this quick, flavorful, and satisfying vegetarian meal!
