Rich and creamy Butternut Squash Soup with crispy bacon bits and fresh sage garnish, perfect for a cozy meal.

From its humble beginnings as one of the very first recipes shared on this blog, this Butternut Squash Soup has quickly become a beloved staple. Its enduring popularity is no surprise, given its delightful fusion of sweet and savory notes, elevated by the irresistible crunch and smoky flavor of bacon. What truly sets this recipe apart, and makes it a favorite for busy cooks, is its clever use of organic pureed butternut squash. This ingenious shortcut means you can skip the time-consuming tasks of chopping and roasting a whole squash, bringing a deeply satisfying meal to your table with minimal effort.

Finding high-quality pureed butternut squash is simpler than you might think. I typically source mine at stores like Trader Joe’s, Wegman’s, or Whole Foods, usually located alongside other canned or jarred vegetables. A serendipitous moment in my kitchen led to an accidental discovery: last week, I inadvertently picked up one can of butternut squash puree and one can of pureed sweet potatoes. This turned out to be the most delicious mistake! The combination of flavors was simply incredible, adding an extra layer of complexity and natural sweetness. In the recipe section, I’ll provide the option to recreate this delightful blend, or you can certainly stick with pure butternut squash for a classic taste.

The Star Ingredients: Butternut Squash, Bacon, and Sage

At the heart of this comforting soup lies the humble butternut squash. Renowned for its naturally sweet, nutty flavor and creamy texture when cooked, butternut squash is also a nutritional powerhouse. It’s packed with vitamins A and C, fiber, and antioxidants, making this soup not only delicious but also incredibly wholesome. By utilizing pre-pureed squash, we’re able to capture all these benefits without any of the fuss typically associated with preparing winter squash from scratch. This convenience factor is a game-changer for weeknight meals or when you need a quick, impressive dish for guests.

Then there’s the bacon – not just any bacon, but quality sugar-free bacon. This ensures our soup remains Whole30 and Paleo compliant while delivering that essential smoky, salty, and utterly irresistible crunch. The rendered bacon fat forms the flavorful base for sautéing our aromatic garlic, infusing every spoonful with a depth of flavor that can’t be replicated. Sage, with its warm, earthy, and slightly peppery notes, is the perfect herbal complement to both the sweet squash and the savory bacon. Its aromatic presence ties all the flavors together, creating a truly harmonious and unforgettable soup.

Essential Ingredients for a Perfect Butternut Squash Soup

Crafting this Butternut Squash Soup with Bacon and Sage relies on a few carefully selected ingredients that contribute to its rich flavor and creamy texture, all while keeping it compliant with specific dietary needs. Here are some noteworthy components:

  • Full-Fat Coconut Milk: For that luxurious, creamy texture without any dairy, full-fat coconut milk is non-negotiable. I recommend using a high-quality brand for the best results. A crucial tip: coconut milk naturally separates in the can, with a thick cream at the top and watery liquid at the bottom. For a smooth soup and especially for a beautiful garnish swirl, make sure to vigorously whisk or blend it thoroughly with an immersion blender before adding it to the pot or drizzling it over your finished bowl. This step ensures an even consistency and prevents a grainy texture.
  • Quality Chicken Broth: The right chicken broth is fundamental for building a rich flavor base. It’s vital to choose a brand that is free from added sugars, MSG, and other common additives, especially if you’re following a Whole30 or Paleo regimen. Always double-check ingredient labels carefully. For an even more wholesome option, consider using homemade chicken broth.
  • A Medley of Spices:
    • Pumpkin Pie Spice: This spice blend, often containing cinnamon, nutmeg, ginger, and cloves, adds a delightful warmth and autumnal aroma. I’m a big fan of organic spices like those from Primal Palate, which are known for their purity. However, a very important note for those following the Autoimmune Protocol (AIP): nutmeg is considered a seed and should be omitted. You can still achieve wonderful flavor by using cinnamon, ginger, and a pinch of ground cloves.
    • Turmeric: Beyond its vibrant golden color, turmeric brings a subtle earthy note and is celebrated for its powerful anti-inflammatory properties. It’s a fantastic addition for both flavor and health benefits.
    • Onion Powder & Ground Sage: These two spices are essential for enhancing the savory and herbaceous profile of the soup. Onion powder adds a foundational sweetness and depth, while ground sage reinforces the distinct, aromatic character that defines this recipe.
  • Sea Salt: Essential for balancing and enhancing all the flavors. Remember to taste and adjust the seasoning as you go.

Why This Soup is a Dietary Dream

This Butternut Squash Soup isn’t just delicious; it’s a culinary chameleon that fits seamlessly into several popular healthy eating plans:

  • Whole30 Compliant: With its focus on real, unprocessed foods, this soup checks all the Whole30 boxes. We use organic butternut squash, sugar-free bacon, full-fat coconut milk, and clean chicken broth, entirely avoiding grains, legumes, dairy, sugar, and alcohol. It’s a hearty, satisfying meal that supports your Whole30 journey.
  • Paleo Friendly: Embracing ancestral eating principles, this recipe naturally aligns with Paleo guidelines. It’s grain-free, dairy-free, and rich in whole, nutrient-dense ingredients like vegetables, healthy fats, and quality protein.
  • AIP Friendly (with a minor adjustment): The Autoimmune Protocol focuses on reducing inflammation by eliminating common food triggers. This soup is almost entirely AIP-compliant! The only modification needed is to ensure your “Pumpkin Pie Spice” blend does not contain nutmeg (which is a seed and typically restricted on AIP). Simply opt for a nutmeg-free blend or make your own with cinnamon, ginger, and cloves.

This flexibility makes it an ideal dish for sharing with friends and family who may have varying dietary needs, or for anyone looking for a clean, comforting meal.

Cooking Tips & Tricks for the Best Butternut Squash Soup

Making this soup is straightforward, but a few tips can ensure truly exceptional results:

  • Crispy Bacon is Key: Don’t rush the bacon-cooking process. Take your time to render the fat and achieve perfectly crispy pieces. Half of this bacon will be stirred into the soup, adding texture and flavor, while the other half is reserved for garnish, providing a delightful crunch with every spoonful.
  • Don’t Waste That Bacon Fat: The rendered bacon fat is liquid gold! It’s the ideal medium for sautéing the minced garlic, infusing it with incredible savory flavor before the rest of the ingredients are added.
  • The Sweet Potato Swap: If you decide to try the sweet potato puree substitution (one can butternut, one can sweet potato), you’ll find it adds an extra layer of natural sweetness and a slightly different earthy depth that is surprisingly delightful. It’s a fantastic variation to keep things interesting.
  • Immersion Blender for Smoothness: While the pureed squash already gives a smooth base, a quick blitz with an immersion blender at the end can ensure an ultra-creamy, velvety texture, especially if any spices haven’t fully dissolved or if you added fresh herbs.
  • Season to Perfection: Always taste and adjust your seasonings before serving. The amount of sea salt, in particular, can be modified to suit your preference and the saltiness of your chicken broth and bacon.

This recipe is designed for simplicity without sacrificing flavor. Its quick prep and cook times make it an ideal choice for a weeknight dinner, yet its rich taste and elegant presentation are equally suited for a special occasion.

Serving Suggestions and Beyond

This Butternut Squash Soup with Bacon and Sage is wonderfully satisfying on its own, but it also pairs beautifully with a variety of accompaniments. For a complete meal, consider serving it alongside a crisp green salad with a light vinaigrette. If you’re not adhering to Whole30 or Paleo, a slice of crusty, gluten-free bread for dipping would be a delightful addition. The generous garnish of crispy bacon, a drizzle of whisked full-fat coconut milk, and a few fresh sage leaves not only add visual appeal but also enhance the textural and flavor experience.

This soup also makes an excellent make-ahead meal. It stores well in the refrigerator for up to 3-4 days and can even be frozen for longer storage (up to 3 months). Simply thaw in the refrigerator overnight and reheat gently on the stovetop, adding a splash of extra broth or coconut milk if needed to restore its creamy consistency.

Butternut Squash Soup with Bacon and Sage

By: Mary Smith
Prep: 5 minutes
Cook: 15 minutes
Total: 20 minutes
Yield: 4 people
A comforting fall/winter soup that makes a great appetizer or light meal. This recipe is naturally gluten-free, dairy-free, and Whole30, Paleo, and AIP friendly.

Ingredients

  • 2 cans Organic Butternut Squash puree*, can also sub 1 can of sweet potato puree for a richer flavor
  • 6 strips uncured sugar-free bacon, (e.g., Pederson Farms or Butcher Box)
  • 2 garlic cloves, minced
  • ½ cup full-fat coconut milk, plus a little extra for garnish
  • 1.5 cups chicken broth
  • 1 tsp Pumpkin Pie Spice (omit for AIP, or use AIP-compliant blend of cinnamon, ginger, and cloves)
  • ½ tsp turmeric
  • 1 tsp onion powder
  • 1 tsp ground sage
  • 1.5 tsp sea salt, more to taste
  • sage leaves, for garnish (optional)

Instructions

  1. Cut the sugar-free bacon into ½ inch pieces. Heat a sturdy stock pot or Dutch oven (I love my Le Creuset Dutch Oven) over medium-high heat. Add the bacon pieces and cook, stirring occasionally, for 5-7 minutes until they are perfectly cooked through and crispy. Once cooked, use a slotted spoon to remove about half of the crispy bacon and set it aside on a paper towel-lined plate to drain and reserve for garnish.
  2. To the remaining bacon and rendered fat in the pan, add the minced garlic. Sauté for 1-2 minutes until the garlic becomes fragrant, being careful not to burn it. Immediately add in the butternut squash puree (and sweet potato puree if using), full-fat coconut milk (make sure it’s well-whisked or blended!), chicken broth, pumpkin pie spice (or AIP blend), turmeric, onion powder, ground sage, and sea salt. Stir all ingredients thoroughly to combine. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 5-7 minutes to allow the flavors to meld beautifully.
  3. Once simmered, taste the soup and adjust salt or other seasonings as needed. Serve the warm soup in bowls, garnished generously with the reserved crispy bacon, a few fresh sage leaves, and an optional drizzle of whisked coconut milk for an extra touch of creaminess and visual appeal. Enjoy your wholesome and flavorful soup!

Notes

*When purchasing butternut squash puree, I found mine at Trader Joe’s. If you are not using this specific brand, always check the ingredient labels carefully to ensure it ONLY contains butternut squash (or butternut and sweet potato if you’re doing the optional swap), with no added sugars or preservatives, especially for Whole30 and AIP compliance.
