Why You’ll Love This Healthy Hawaiian Chicken Recipe

This dish stands out for several compelling reasons:

  • Whole30 & Paleo Approved: This recipe meticulously avoids common allergens and inflammatory ingredients, making it perfect for those following a Whole30 program or a paleo diet. We swap out traditional soy sauce and refined sugars for healthier alternatives like coconut aminos and pineapple juice, ensuring a flavorful yet compliant meal.
  • Instant Pot Efficiency: The Instant Pot significantly cuts down on cooking time, making this a perfect meal for busy evenings. It tenderizes the chicken beautifully and infuses it with the rich, complex flavors of the sauce in a fraction of the time compared to conventional methods.
  • Authentic Flavor Profile: Despite its healthy makeover, this Hawaiian chicken doesn’t skimp on flavor. The combination of sweet pineapple, savory coconut aminos, a hint of spice, and a touch of tang creates a perfectly balanced sweet and sour experience that will transport your taste buds straight to the tropics.

Essential Ingredients for a Perfect Whole30 Meal

Crafting this Whole30 Hawaiian Chicken requires a thoughtful selection of ingredients that align with the program’s guidelines while delivering maximum flavor. Many of these pantry staples can be conveniently sourced from platforms like Thrive Market, which offers a wide array of high-quality, Whole30-compliant products delivered right to your door. • Chicken: As mentioned, boneless, skinless chicken breasts, thighs, or tenders all work wonderfully. Cutting the chicken into uniform 1.5-inch cubes ensures even cooking and allows each piece to be perfectly coated in the delicious sauce.
  • Aromatics & Vegetables: Fresh garlic, red bell pepper, and onion form the flavorful base of this dish. The bell pepper and onion add a pleasant crunch and natural sweetness, complementing the pineapple beautifully.
  • Pineapple Chunks in 100% Juice: The star of the show! Make sure to reserve a quarter cup of the juice, as it plays a crucial role in creating the smooth, thick sauce. The natural sweetness of the pineapple juice eliminates the need for any added sugars.
  • Whole30 Approved BBQ Sauce: This ingredient adds depth and a subtle smoky sweetness without any added sugars or unhealthy additives. Brands like The New Primal, Tessemae’s, and Primal Kitchen offer excellent Whole30-compliant options. If BBQ sauce isn’t available, a Whole30 approved ketchup can serve as a suitable substitute.
  • Coconut Aminos: A fantastic soy-free alternative to soy sauce, coconut aminos provide a rich, umami flavor with a touch of sweetness. It’s a cornerstone of paleo and Whole30 Asian-inspired cooking.
  • Fish Sauce: Just a half teaspoon of Red Boat fish sauce adds an incredible depth of savory flavor, much like an umami boost. If you don’t have fish sauce, a teaspoon of sea salt can work as a basic substitute, but fish sauce truly elevates the dish.
  • Apple Cider Vinegar: Contributes the essential tanginess that balances the sweetness of the pineapple and BBQ sauce, rounding out the classic sweet and sour profile.
  • Ginger: Fresh minced ginger provides a warm, pungent zing that is characteristic of many Asian dishes. If fresh ginger isn’t on hand, powdered ginger is a convenient alternative.
  • Crushed Red Pepper Flakes: For a touch of heat, adjust the amount to your preference. This adds a subtle warmth that enhances the overall flavor without overpowering it.
  • Arrowroot Powder: This gluten-free starch is essential for thickening the sauce, giving it that luscious, glossy finish. Mixed with the reserved pineapple juice, it creates a smooth slurry that prevents lumps.

Whole30 Instant Pot Hawaiian Chicken served elegantly in a pineapple bowl

The Art of Serving Your Hawaiian Chicken

While serving this delightful chicken in a hollowed-out pineapple half certainly adds a festive and elegant touch, it’s entirely optional. The true beauty of this dish lies in its versatility and incredible flavor, making it a star no matter how you present it.

For those following a paleo or Whole30 diet, serving over cauliflower rice is an excellent choice. It’s light, absorbs the sauce beautifully, and keeps the meal compliant. If you’re not on a strict diet, classic white rice or brown rice makes a wonderful accompaniment, soaking up every drop of that irresistible sweet and sour sauce. Garnish with chopped green onions and a sprinkle of sesame seeds for an added layer of flavor and visual appeal.

This Instant Pot Hawaiian Chicken is not just a meal; it’s an experience. It’s a reminder that healthy eating doesn’t have to be bland or boring, and that with a few smart ingredient swaps and a powerful kitchen tool, you can recreate your favorite comfort foods in a way that nourishes your body and delights your palate. Whether you’re a seasoned Instant Pot user or just starting your culinary journey, this recipe promises ease, flavor, and satisfaction.

Ingredients

  • 2 lbs chicken breasts , cut into 1.5 inch cubes (boneless skinless thighs or chicken tenders also work!)
  • 1 red bell pepper, chopped into 1 inch pieces
  • ½ onion, chopped into 1 inch pieces
  • 3 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 20 oz can pineapple chunks in 100% juice, reserve ¼ cup of the juice
  • ¼ cup Whole30 approved BBQ sauce, ketchup will work if you don’t have BBQ
  • ⅓ cup coconut aminos
  • ½ tsp Red Boat fish sauce, *sub 1 tsp sea salt if you don’t have this
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh minced ginger, or 1 tsp dried/powdered ginger
  • ½ tsp crushed red pepper flakes
  • 2 tbsp arrowroot powder

Instructions

  • Press the “Saute” button on your Instant Pot and add the sesame oil. Allow it to heat for about a minute, then add the cubed chicken pieces along with the minced garlic. Stir frequently for 5-7 minutes until the chicken begins to brown.
  • Add all remaining ingredients (except for the arrowroot powder and the reserved ¼ cup of pineapple juice) to the Instant Pot. Stir well to ensure everything is thoroughly combined.
  • Secure the lid on your Instant Pot, turn the knob to the “Sealing” position, and set it to “Manual” or “Pressure Cook” on high pressure for 5 minutes. Once the timer completes, allow for a natural pressure release for 10 minutes before performing a quick release of any remaining pressure.
  • While the Instant Pot is cooking or releasing pressure, prepare your slurry: stir the arrowroot powder into the reserved ¼ cup of pineapple juice until it is completely dissolved and no lumps remain.
  • Once the pressure has fully released, use a slotted spoon to carefully remove the chicken, onion, pineapple, and red pepper pieces from the Instant Pot and transfer them to a separate bowl. Set aside. Hit the “Saute” button again on your Instant Pot and bring the remaining sauce to a boil. Gradually stir in the arrowroot/pineapple juice slurry. Allow the sauce to cook and thicken for about 10 minutes, stirring occasionally, until it reaches your desired consistency. Return the chicken and vegetables to the pot and stir to coat them evenly in the thickened sauce. Serve immediately over your choice of rice (cauliflower rice for Whole30/Paleo) and top with sliced green onions and/or toasted sesame seeds. Enjoy your delicious Whole30 Hawaiian Chicken!

Stovetop Instructions:

  • Heat a large skillet or Dutch oven over medium heat. Add the sesame oil and allow it to heat for 1-2 minutes. Add the cubed chicken and minced garlic; sauté for 3 minutes until lightly browned. Incorporate the chopped onions and bell peppers, stirring for an additional 2 minutes until slightly softened. Add all remaining ingredients (except for the arrowroot powder and ¼ cup reserved pineapple juice). Bring the mixture to a boil, then reduce the heat to medium-low. Cover the skillet and simmer for 10 minutes, stirring occasionally to prevent sticking and ensure even cooking. Meanwhile, prepare the arrowroot slurry by mixing the arrowroot powder with the reserved ¼ cup pineapple juice. Using a slotted spoon, remove the chicken and vegetables from the skillet and place them in a separate bowl. Bring the sauce in the skillet back to a boil, then whisk in the slurry. Continue stirring over medium heat for 3-4 minutes until the sauce thickens to your preference. Return the cooked chicken and veggies to the skillet and stir to combine thoroughly with the sauce. Serve this delightful Hawaiian Chicken over your preferred rice (cauliflower rice for Whole30/Paleo) and garnish with green onions and/or sesame seeds. Enjoy!
