Essential Ingredients for Your Perfect Healthy Fish & Chips

Crafting this healthy version of fish and chips starts with selecting the right ingredients. Each component plays a crucial role in achieving the perfect flavor and texture while adhering to dietary guidelines.
For the Crispy Fish and Golden Chips:
- Cod Fillets: The star of the show! Cod is a fantastic choice for its mild flavor and flaky texture when cooked. I often pick up frozen fillets from Costco for convenience and quality. You can also opt for other flaky white fish like mahi-mahi, haddock, or even tilapia. Ensure your fish is thawed and patted thoroughly dry before breading for the best crispy results.
- Ghee (Clarified Butter): Used for its rich, buttery flavor and high smoke point, making it excellent for pan-frying. If you’re not strictly Whole30 or dairy-free, regular butter works, or you can use vegan butter for a plant-based option.
- Olive Oil or Avocado Oil: These healthy oils are used for roasting the potatoes and provide a good cooking fat for the fish. Avocado oil is particularly great for its neutral flavor and high smoke point.
- Eggs: Essential for creating a binder that helps the almond flour batter adhere to the fish fillets, ensuring a consistent and crispy coating.
- Almond Flour: Our gluten-free hero! Almond flour provides a wonderfully light and crisp texture to the fish batter. For those with nut allergies, a 1:1 gluten-free flour blend can be substituted, though note it will alter the carb count and may not be Whole30 compliant.
- Garlic Powder & Onion Powder: These aromatic spices infuse both the fish batter and the potatoes with savory depth, complementing the natural flavors of the seafood and earthy potatoes.
- Sea Salt & Black Pepper: Fundamental seasonings to enhance all the flavors in the dish. Adjust to your personal preference.
- Baby Potatoes: Perfect for creating those authentic “chips.” Their smaller size means less chopping, and they roast beautifully. Russet potatoes, cut into 1-inch chunks, are a great alternative for a more classic fry shape.
- Parsley (Dried or Fresh): Adds a touch of freshness and color. Dried parsley is convenient for the potato seasoning, while fresh parsley makes an excellent garnish.
A Quick Note on Traditional Ingredients: Many classic fish and chips recipes call for beer in the fish batter. To keep this recipe strictly gluten-free and Whole30, we’ve omitted it entirely. The result is still incredibly flavorful and crispy! Similarly, traditional malt vinegar is not gluten-free due to its barley content. If you enjoy a vinegary tang, consider using apple cider vinegar or lemon juice instead. See our FAQ section below for more details on gluten-free considerations.
For the Tangy Homemade Tartar Sauce:
No fish and chips meal is complete without a creamy, zesty tartar sauce. Our homemade version is not only delicious but also keto-friendly and Whole30 compliant.
- Compliant Mayonnaise: The base of our sauce. Look for avocado oil mayonnaise brands like Sir Kensington’s (which is now sugar-free and Whole30 compliant) for a healthier alternative to traditional mayo.
- Hot Sauce: A dash of hot sauce, such as Frank’s RedHot, adds a subtle kick and complexity to the sauce without overpowering it.
- Pickles (Diced Fine): Chopped pickles (Grillo’s are a personal favorite!) provide a crucial briny, tangy element and a delightful textural contrast.
- Apple Cider Vinegar: Contributes a bright, acidic note, balancing the richness of the mayo and enhancing the overall tanginess.
How To Make Gluten Free Fish & Chips: Step-by-Step Guide

Achieving perfectly crispy fish and golden chips is easier than you think. Follow these detailed steps for either the sheet pan oven method or the quick air fryer alternative.
Sheet Pan Oven Method: Baked Perfection
- Prepare the Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil or avocado oil, ½ teaspoon of sea salt, 1 teaspoon of garlic powder, and 1 teaspoon of dried parsley. Ensure the potatoes are evenly coated. Spread them out in a single layer, cut-side down, on a large baking sheet lined with parchment paper. This parchment paper prevents sticking and aids in easy cleanup. Roast for 10 minutes to give them a head start and begin crisping.
- Prepare the Fish Batter: While the potatoes roast, set up your breading station. In one shallow bowl, whisk the egg with a fork. In a separate shallow bowl, combine the dry ingredients: ½ cup almond flour, ½ teaspoon sea salt, ¼ teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Mix well until all spices are evenly distributed. Crucially, pat your cod fillets thoroughly dry with paper towels. This step is vital for ensuring the batter adheres properly and results in a crispy crust.
- Pan-Fry the Fish: Heat 1 tablespoon of olive oil (or avocado oil) and 1 tablespoon of ghee in a large skillet (cast iron works wonderfully) over medium heat. Once hot, dip each piece of cod into the beaten egg to fully coat, allowing any excess to drip off. Then, dredge the fish in the almond flour mixture, pressing gently to ensure a good, even coating on all sides. Carefully place the breaded fish fillets into the hot pan in a single layer, ensuring not to overcrowd the skillet. Cook for 2-3 minutes on each side until beautifully browned and golden perfection. This initial pan-fry creates a fantastic crust.
- Combine and Finish Baking: Carefully remove the potatoes from the oven after their initial 10-minute roast. Reduce the oven temperature to 400°F (200°C). Gently push the par-roasted potatoes to one side of the baking sheet, creating space in the middle for your fish fillets. Arrange the freshly pan-fried fish fillets on the vacant space of the sheet pan. Return the sheet pan to the oven and bake for an additional 15-20 minutes. The fish is done when it easily flakes with a fork, and the potatoes are cooked through and wonderfully crispy.

Air Fryer Fish and Chips: Crispy in Minutes
For a quicker, even crispier result, the air fryer is your best friend!
- Batter the Fish: Follow step 2 from the oven method to dip your fish fillets in the egg and then coat them thoroughly in the almond flour mixture.
- Air Fry: Lightly spray the air fryer basket with olive oil or avocado oil to prevent sticking. Carefully place the battered fish fillets in a single layer in the basket, ensuring not to overcrowd. You may need to cook in batches depending on the size of your air fryer.
- Cook to Perfection: Air fry at 400°F (200°C) for 10-13 minutes, flipping halfway through, or until the fish is golden brown, crispy, and reaches an internal temperature of 145°F (63°C). For the chips, you can air fry them separately or air fry the fish first, then the potatoes.

Homemade Tartar Sauce: The Essential Accompaniment
This healthy, keto-friendly tartar sauce is a revelation and the perfect complement to your fish and chips, or any fish dish!
- Combine Ingredients: In a small bowl, combine all tartar sauce ingredients: ½ cup compliant mayo, 1.5 tablespoons hot sauce, 1 large pickle (diced fine), and 1 teaspoon apple cider vinegar. Mix everything well until thoroughly combined and creamy.
- Chill and Serve: For best results, allow the tartar sauce to chill in the refrigerator for at least 15-20 minutes before serving. This allows the flavors to meld beautifully. You can make this sauce 1-2 days ahead of time, and it will keep well in an airtight container in the fridge for 3-4 days.
- Enjoy: Generously dollop the homemade tartar sauce over your crispy fish and golden chips. It adds a refreshing, tangy counterpoint that elevates the entire meal.
Mary’s Expert Tips & Tricks for Success
Mastering healthy fish and chips is easy with a few insider tips:
- Flour Alternative for Batter: While almond flour keeps this recipe Whole30 and keto, you can substitute a gluten-free all-purpose flour blend if preferred. Be mindful that most gluten-free flour blends are not Whole30 compliant and will increase the carb count, making the dish no longer keto-friendly. However, it will still be a delicious gluten-free and dairy-free option.
- For Extra Crispy Chips: For ultra-crispy potatoes, soak the cut potatoes in cold water for 30 minutes before tossing with oil and spices. Drain thoroughly and pat very dry. This removes excess starch, leading to a crispier exterior. Flipping them halfway through roasting or air frying also ensures even browning.
- Optimal Fish Choice: Always choose firm, white, flaky fish. If using frozen fish, ensure it’s fully thawed and patted extremely dry. Excess moisture is the enemy of crispiness!
- Storage and Reheating Leftovers: Store any leftover fish and chips in an airtight container in the refrigerator for up to 3 days. To reheat, avoid the microwave if possible, as it can make the fish soggy. For best results, pan-fry over medium heat until warmed through and crispy again, or bake in a preheated oven at 350°F (175°C) for 15-20 minutes.
- Transform into Gluten-Free Fish Sticks: This recipe is incredibly versatile! To create homemade gluten-free fish sticks, simply cut your cod fillets into “stick” shapes (about 1×3 inches) before dipping them into the egg and flour mixtures. Adjust cooking times slightly as smaller pieces will cook faster.
- Flavor Variations: Experiment with different spice blends. Try adding smoked paprika for a smoky flavor, or a pinch of cayenne pepper for some heat to your fish batter or potato seasoning.
- Serving Suggestions: Serve your fish and chips with fresh lemon wedges for a squeeze of bright citrus. A simple side salad or some mushy peas (if not strictly Whole30) can complete the meal.
Frequently Asked Questions (FAQs)
Traditional fish and chips, typically deep-fried in inflammatory oils and coated in a wheat-based batter, can be quite high in unhealthy fats and calories. However, this sheet pan gluten-free fish and chips recipe is a much healthier alternative. By baking or air frying the fish instead of deep-frying and using an almond flour batter, we significantly cut down on saturated fats and calories while still delivering a meal packed with lean protein and wholesome carbohydrates from the potatoes. It’s a balanced and nutritious dinner option.
I generally do not recommend freezing the cooked, battered fish and chips, as the texture can become soggy and unpleasant upon reheating. The crispy batter doesn’t hold up well to freezing and thawing. If you have uncooked fish fillets that you’d like to prepare later, you can freeze them plain and thaw them overnight in the refrigerator before battering and cooking for this recipe.
Unless the batter is specifically gluten-free, individuals with Celiac disease unfortunately cannot eat regular battered fish. Traditional batters often contain wheat flour, barley, or rye, which are all off-limits for Celiacs. This recipe, however, uses almond flour, making it a safe and delicious option for those following a gluten-free diet due to Celiac disease or gluten sensitivity.
The best fish for fish and chips is typically a firm, white, flaky fish that holds up well during cooking. Cod is a classic choice, known for its mild flavor and perfect texture. Haddock, pollock, mahi-mahi, and even tilapia are also excellent alternatives that will yield delicious results.
Absolutely! This recipe is naturally dairy-free as written. Ghee is clarified butter, meaning the dairy solids have been removed, making it suitable for many with dairy sensitivities (though always check your own tolerance). Olive oil or avocado oil are also great dairy-free alternatives. For the tartar sauce, ensure you use a compliant dairy-free mayonnaise, such as avocado oil mayo.

- 1.5 tbsp Frank’s RedHot hot sauce
- 1 large pickle, diced fine (Grillo’s recommended)
- 1 tsp apple cider vinegar
Instructions
Baked Fish & Chips
- Preheat oven to 425°F (220°C). Toss potatoes with the olive oil, salt, garlic powder, and parsley. Spread out, cut side down, on a parchment-lined baking sheet. Roast for 10 minutes.
- Meanwhile, add the egg to a shallow bowl and beat with a fork. Add almond flour, salt, pepper, onion powder, and garlic powder to a separate shallow bowl and mix well. Pat your fish dry with a paper towel.
- Heat 1 tbsp olive or avocado oil + 1 tbsp ghee in a skillet over medium heat. Dip each piece of cod into the egg to coat, then into the almond flour mixture to coat. Place into the pan and cook for 2-3 minutes each side until browned and golden.
- Take the potatoes out of the oven and reduce the oven temperature to 400°F (200°C). Push the potatoes aside on the pan, making room in the middle for the fish fillets. Add the fish to the pan, then bake for an additional 15-20 minutes until the fish flakes when cut and the potatoes are cooked through and crispy.
Air Fryer Fish & Chips
- Dip fish in egg and then in the batter mixture. Spray the air fryer basket with oil and place your battered fish fillets in a single layer.
- Cook at 400°F (200°C) for 10-13 minutes, flipping halfway through, or until the battered fish is golden brown and reaches an internal temperature of 145°F (63°C).
Tartar Sauce
- Combine all tartar sauce ingredients and mix well. Can be made 1-2 days ahead of time and will keep well in the fridge for 3-4 days.
- Top the fish with the tartar sauce. The potatoes are great with the sauce, too! Enjoy!
Notes
Flour Alternative for Batter: If you prefer, you may substitute gluten-free all-purpose flour for the almond flour in this recipe. Keep in mind that gluten-free flour is not Whole30 compliant. This flour will also raise the carb count, so it will no longer be keto fish & chips, but it will still be gluten-free and dairy-free.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, pan-fry over medium heat or bake in the oven at 350°F (175°C) for 15-20 minutes. You can also pop it in the microwave for 2 minutes for a quick reheat, though crispiness may be compromised.
