The Benefits of Paleo Baking

Embracing paleo baking opens up a world of delicious possibilities for those looking to nourish their bodies with whole, unprocessed foods. This recipe is a prime example of how you can enjoy decadent desserts while supporting your health goals. By eliminating grains like wheat, barley, and rye, and dairy products, paleo baking can reduce inflammation, improve digestion, and help stabilize blood sugar levels for many individuals. Substituting refined sugars with natural sweeteners like coconut sugar also provides a slower release of energy and adds trace minerals.

Our choice of almond and coconut flours not only makes these brownies gluten-free and grain-free but also adds healthy fats, fiber, and protein, contributing to a more satisfying and nutritious dessert. This thoughtful approach ensures that every bite is not only incredibly tasty but also fuels your body without the common pitfalls of traditional baked goods.

Essential Ingredients for These Paleo Double Chocolate Thin Mint Brownies

Crafting the perfect paleo brownie starts with selecting quality ingredients. Each component plays a vital role in achieving the desired flavor and texture. Many of these pantry staples can be found on platforms like Thrive Market, which offers healthy products at competitive prices.

  • 4 oz Dark Chocolate: The foundation of our chocolatey goodness. Opt for a high-quality dark chocolate (70% cacao or higher) for the richest flavor. I highly recommend Hu Chocolate, as it’s made with coconut sugar, aligning perfectly with paleo principles. Enjoy Life is another excellent, allergy-friendly brand, though it typically uses cane sugar.
  • Olive Oil or Coconut Oil: These healthy fats contribute to the brownies’ incredible fudginess. Olive oil imparts a subtle fruity note, while coconut oil offers a richer, slightly tropical flavor that complements chocolate beautifully. Either works wonderfully.
  • Eggs: Essential for structure and binding, eggs help create that desirable chewy texture.
  • Unsweetened Applesauce: A fantastic natural sweetener and moisture provider, unsweetened applesauce also helps reduce the amount of added sugar needed in the recipe.
  • Vanilla Extract: A crucial flavor enhancer, vanilla extract deepens the chocolate notes, adding complexity to the overall taste.
  • Peppermint Extract: The star ingredient that gives these brownies their signature “Thin Mint” character. Use a good quality peppermint extract for the best flavor. If you prefer a classic chocolate brownie, simply omit this ingredient.
  • Coconut Sugar: Our paleo-friendly sweetener of choice. Coconut sugar has a lower glycemic index than regular sugar and imparts a subtle caramel-like flavor. While you can substitute with regular granulated sugar, please note that doing so will make the brownies no longer strictly paleo.
  • Almond Flour: A fantastic grain-free flour that provides structure and a delicate crumb. Blanched almond flour is recommended for a finer texture.
  • Coconut Flour: Highly absorbent, coconut flour is used in smaller quantities to add tenderness and structure without making the brownies dry. The combination of almond and coconut flour creates the perfect balance.
  • Cacao Powder: For an intense chocolate flavor and beautiful dark color, cacao powder is superior. Look for pure, raw cacao for maximum nutritional benefits and a rich, unadulterated chocolate taste.
  • Chocolate Chips (Optional): For an extra boost of chocolatey goodness and delightful pockets of melted chocolate, stir in some paleo-friendly dark chocolate chips.
  • Baking Soda: We use just a small amount of baking soda to provide a slight lift, ensuring the brownies aren’t overly dense. If you prefer an extra-dense, almost candy-bar-like fudgy texture, you can omit it.
  • Salt: A pinch of sea salt is essential to balance the sweetness and enhance all the chocolate flavors.
  • More Dark Chocolate or Chocolate Chips for the Drizzle: An optional but highly recommended step for an extra layer of decadence and a beautiful finish. Melted with a little oil, it creates a glossy, rich topping.

Essential Tools for Baking the Perfect Brownies

Having the right equipment ensures a smooth baking process and perfect results. For these brownies, an 8×8 inch brownie pan is your best bet, yielding thick, satisfying squares. A 9×9 inch pan will also work, but keep in mind that your brownies will be slightly thinner, and you may need to adjust the baking time accordingly (likely reducing it by a few minutes). Lining your pan with parchment paper is also highly recommended to ensure easy removal and clean slices.

How to Make These Paleo Thin Mint Brownies: A Step-by-Step Guide

Creating these delightful brownies is a simple process. Follow these steps for an effortlessly delicious treat:

  1. Prepare Your Oven and Pan: Begin by preheating your oven to 350°F (175°C). Lightly spray an 8×8 inch baking pan with cooking oil, or for even easier removal, line it with parchment paper, leaving an overhang on the sides to use as “handles.”
  2. Melt the Chocolate and Oil: In a microwave-safe bowl, combine the dark chocolate (or chocolate chips) and your chosen oil (olive or coconut). Microwave in 30-second increments, stirring well after each interval, until the mixture is smooth and fully combined. Be careful not to overheat the chocolate. Set this mixture aside to cool slightly while you prepare the wet ingredients.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the eggs, unsweetened applesauce, coconut sugar, vanilla extract, and peppermint extract (if using) until well combined and smooth.
  4. Integrate Chocolate Mixture: Slowly pour the slightly cooled melted chocolate and oil mixture into the wet ingredients, stirring continuously with a fork or whisk until everything is thoroughly incorporated and uniform in color.
  5. Mix Dry Ingredients: In another bowl, combine the almond flour, coconut flour, cacao powder, baking soda, and salt. Whisk these dry ingredients together to ensure they are evenly distributed.
  6. Combine Wet and Dry: Pour the dry mixture into the wet chocolate mixture. Stir gently with a spatula until just combined. Be careful not to overmix, as this can lead to a tougher brownie texture. If desired, fold in the optional chocolate chips now.
  7. Bake to Perfection: Transfer the brownie batter into your prepared 8×8 inch baking pan. Use a spatula to spread it evenly. Bake for 13-15 minutes. The brownies are ready when the edges are set and a toothpick inserted into the center comes out with moist crumbs, not wet batter. Remember, slightly under-baking is key for fudgy brownies.
  8. Cool Completely: This step is crucial for perfect fudginess and clean slices! Allow the brownies to cool in the pan for at least 30 minutes before attempting to slice them. Cooling them completely, ideally on a wire rack, will further enhance their fudgy texture.
  9. Add Optional Chocolate Drizzle: For an extra touch of elegance and chocolate flavor, melt an additional ⅓ cup of dark chocolate with 1 tablespoon of oil. Stir until smooth, then drizzle it evenly over the cooled, sliced brownies. Spread it out with a knife if you prefer a solid topping.
  10. Serve and Enjoy: Cut your cooled brownies into squares. Serve them with a generous glass of almond milk and savor every decadent bite!

Tips for the Best Fudgy Brownies

  • Don’t Overmix: When combining wet and dry ingredients, stir just until no streaks of dry flour remain. Overmixing develops gluten (even in gluten-free flours, it can affect texture), leading to tougher brownies.
  • Don’t Overbake: This is arguably the most important rule for fudgy brownies. Keep a close eye on them. They should still look slightly moist in the center when you pull them out of the oven. They will continue to cook slightly as they cool.
  • Cool Completely: Resist the urge to cut into warm brownies! Cooling allows them to fully set, making them fudgier and easier to slice cleanly. For an extra firm brownie, you can even chill them in the refrigerator before cutting.
  • Use Quality Ingredients: Especially for chocolate and extracts, better quality ingredients will always translate to better flavor in your final product.

Where To Store These Paleo Brownies

Proper storage ensures your delicious brownies remain fresh and enjoyable:

  • Room Temperature: You can keep these brownies covered with foil or in an airtight container on your kitchen counter for up to 5 days. Ensure they are in a cool, dry place.
  • Refrigerator: For extended freshness, store the brownies in an airtight container in the fridge for up to a week. Chilling can also enhance their fudgy texture.
  • Freezer: These brownies freeze beautifully! Wrap individual slices tightly in plastic wrap, then place them in a freezer-safe bag or container. They can be frozen for 2-3 months. Thaw at room temperature or gently warm them in the microwave for a few seconds.

Common Questions and Troubleshooting

  • My brownies are dry/cakey: This is almost always due to overbaking. Ensure you’re pulling them out when the edges are set but the center still looks a bit moist. Also, avoid overmixing the batter.
  • My brownies are too oily: Double-check your oil measurements. If using coconut oil, ensure it’s melted for accurate measurement.
  • Can I use a different sweetener? While coconut sugar is recommended for paleo, other granulated sweeteners like maple sugar or even erythritol could work. However, the texture and sweetness level might vary, and some alternatives may not be strictly paleo.
  • Can I skip the peppermint extract? Absolutely! If you’re not a fan of mint, simply omit the peppermint extract for a fantastic double chocolate paleo brownie.
