Essential Ingredient Notes for Your Perfect Marsala

Selecting the right ingredients is key to achieving the robust and harmonious flavors of this Chicken Marsala Fettuccine. Here’s a detailed look at the components that make this dish truly special:
Chicken Breasts: For optimal tenderness and quicker cooking, I recommend using large chicken breasts and slicing them in half lengthwise. This technique yields thinner cutlets, typically 4-6 pieces from 1.5 lbs of chicken, which cook more evenly and absorb the rich Marsala sauce beautifully. Pounding them to a ¼-inch thickness also helps in achieving that melt-in-your-mouth texture.
Prosciutto: While optional, incorporating prosciutto is highly encouraged. Its distinctive salty, savory notes and delightful crispiness when pan-fried add an incredible layer of depth and texture that truly elevates this chicken marsala fettuccine. It provides a wonderful counterpoint to the sweetness of the Marsala wine.
Mushrooms: Cremini mushrooms (also known as baby bellas) are my preferred choice due to their richer, earthier flavor and firmer texture. However, standard white button mushrooms are a perfectly acceptable and delicious alternative, providing a mild, classic mushroom taste that blends well with the sauce.
Tapioca Flour: This gluten-free flour is essential for coating the chicken breasts. It helps create a beautiful golden-brown crust and a slightly crispy exterior when seared, locking in the chicken’s moisture and adding textural interest. It’s an excellent alternative to traditional wheat flour for gluten-free cooking.
Ghee: Clarified butter, or ghee, imparts a rich, nutty flavor and has a higher smoke point than regular butter, making it ideal for searing. If you have dairy allergies or prefer a vegan option, a high-quality vegan butter can be substituted seamlessly, maintaining the desired richness in the dish.
Marsala Wine: The star of the sauce! Marsala is a fortified wine from Sicily, known for its complex, slightly sweet, and nutty profile with notes of dried fruit. I generally opt for a dry Marsala wine for savory dishes like this to prevent the sauce from becoming overly sweet. You can find Marsala wine at most liquor stores or specialty wine shops. Marsala cooking wine, available in the grocery store, is also an option, though a proper drinking Marsala will yield a more nuanced flavor. While I haven’t tested a non-alcoholic version, much of the alcohol cooks off during the reduction process, leaving behind its wonderful flavor.
Chicken Broth: This forms the savory base of our sauce. High-quality chicken broth, chicken stock, or even bone broth can be used interchangeably. Using a good broth will significantly enhance the overall flavor complexity of your Marsala sauce.
Full-Fat Coconut Milk: For those avoiding dairy, full-fat canned coconut milk is an ingenious substitute for heavy cream, providing a luscious, creamy texture without any dairy. Don’t worry, when combined with the other robust flavors, the coconut taste is virtually undetectable. Another excellent dairy-free option is Original Nutpods. If dairy isn’t an issue for you, feel free to use traditional half & half or heavy cream for an equally decadent sauce.
Arrowroot Powder: This gluten-free thickener is crucial for achieving that perfectly velvety consistency in our Marsala sauce. It’s a fantastic natural alternative to corn starch, creating a smooth and glossy finish. Remember to mix it with water to form a slurry before adding to hot liquids to prevent lumps.
Shallot: A diced shallot provides a milder, sweeter, and more delicate onion flavor compared to a regular onion, contributing a subtle aromatic depth to the sauce. However, if a shallot isn’t available, a small amount of finely diced yellow onion can be used as a suitable alternative.
Crafting Your Creamy Chicken Marsala Pasta: A Step-by-Step Guide

Follow these detailed steps to create a show-stopping creamy Chicken Marsala Fettuccine that’s both gluten-free and dairy-free:
- Prepare the Pasta: Begin by cooking your chosen gluten-free fettuccine pasta according to the package directions. It’s crucial to cook it until it’s perfectly al dente – firm to the bite. Overcooked pasta can become mushy, especially when tossed in sauce. Once cooked, drain the pasta thoroughly and set it aside.
- Pound and Season the Chicken: Take your chicken breast halves and, using a meat mallet or a heavy pan, pound them gently to an even ¼-inch thickness. This ensures uniform cooking. Generously sprinkle both sides of each chicken piece with sea salt, freshly ground black pepper, and garlic powder. This foundational seasoning is vital for flavor.
- Sear the Chicken: In a large, non-stick skillet, heat 1 tablespoon of ghee (or vegan butter) and 1 tablespoon of olive oil over medium-high heat until shimmering. Lightly coat each seasoned chicken cutlet in tapioca flour, shaking off any excess. Carefully add the floured chicken to the hot pan and sear for approximately 4 minutes per side, or until golden brown and cooked through. Depending on the size of your pan and the number of chicken pieces, you may need to cook them in two batches to avoid overcrowding, which can lead to steaming instead of searing. If needed, add a little more ghee or olive oil between batches. Once cooked, remove the chicken from the pan and set it aside on a plate.
- Crisp the Prosciutto: In the same skillet (no need to clean it, those flavorful brown bits are key!), add the prosciutto pieces. Cook for 1-2 minutes over medium heat, stirring occasionally, until they become deliciously crisp. Remove the crispy prosciutto from the pan and set it aside with the chicken.

- Sauté Aromatics & Deglaze with Marsala: Add the remaining 1 tablespoon of ghee to the pan. Once melted, add the minced garlic, diced shallot, and sliced mushrooms. Sauté for about 5 minutes, stirring frequently, until the mushrooms soften and release their moisture, and the shallots become translucent. Pour in the ¾ cup of Marsala wine. Use a wooden spoon to scrape up any flavorful brown bits (fond) from the bottom of the pan – these bits are packed with flavor and will enrich your sauce.
- Reduce Wine & Thicken Sauce: Allow the Marsala wine to simmer and reduce by about half, which typically takes 3-4 minutes. This process concentrates the wine’s flavor and cooks off most of the alcohol. Next, pour in the chicken broth and coconut milk (or Nutpods) and stir to combine. Bring the mixture to a gentle boil. In a small separate bowl, whisk together the arrowroot powder and 1 tablespoon of water to create a smooth slurry. Slowly pour this slurry into the simmering sauce in the pan, stirring continuously for 1-2 minutes. You’ll notice the sauce begin to thicken into a luxurious, velvety consistency.
- Combine & Simmer: Return the seared chicken cutlets to the pan, nestling them into the thickened Marsala sauce. Reduce the heat to medium-low and let the chicken simmer for an additional 5 minutes. This allows the chicken to finish cooking through and absorb the incredible flavors of the sauce. Taste the sauce and adjust seasoning with additional salt and pepper as needed.
- Serve: You have a couple of serving options here:
- Option A (Pasta Mixed with Sauce): Remove the chicken from the pan and set it aside. Add the cooked fettuccine pasta directly into the sauce in the skillet and toss to combine, ensuring every strand is coated. Then, nestle the chicken cutlets back into the pan on top of the pasta.
- Option B (Chicken Over Pasta): Keep the chicken in the sauce. Serve portions of the pasta on individual plates, then spoon the chicken and generous amounts of the Marsala sauce over the noodles.
Garnish with fresh parsley and a sprinkle of dairy-free or regular Parmesan cheese, if desired, for an extra touch of flavor and visual appeal.

Expert Tips & Tricks for the Best Chicken Marsala
To ensure your Chicken Marsala Fettuccine turns out perfect every time, consider these helpful tips:
- Storage: Leftover Chicken Marsala Fettuccine can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much.
- Freezing: If you plan to freeze this recipe, I highly recommend omitting the pasta from the freezing process. Gluten-free pasta, in particular, tends to become mushy and lose its texture upon thawing and reheating. Instead, freeze the chicken Marsala and prosciutto in an airtight container for up to 3 months. When you’re ready to serve, simply thaw, reheat the sauce and chicken, and cook a fresh batch of pasta to combine.
- Non-Stick Pan is Key: Using a good quality non-stick pan is crucial for searing the chicken effectively. This prevents the delicate tapioca flour coating from sticking to the pan, ensuring a beautiful, crispy crust and easy cleanup. It also helps in achieving that perfect golden-brown color without tearing the chicken.
- Wine Quality Matters: While cooking Marsala wine works, a higher quality dry Marsala (one you would enjoy drinking) will impart a more complex and richer flavor to your sauce. The subtle notes of caramel and dried fruit from a good Marsala are truly unparalleled.
- Chicken Pounding Technique: Don’t skip pounding the chicken! This step tenderizes the meat and ensures all pieces cook uniformly and quickly, preventing some parts from drying out while others are still cooking. Aim for an even thickness across the entire cutlet.
- Don’t Overcrowd the Pan: When searing the chicken or crisping the prosciutto, cook in batches if necessary. Overcrowding lowers the pan’s temperature, leading to steamed instead of beautifully seared or crispy results.
- Taste and Adjust: Always taste your sauce before serving and adjust salt and pepper. The amount needed can vary based on the saltiness of your broth and prosciutto.
Recipe FAQ’s
Marsala wine is a fortified wine with a rich and distinctive flavor profile. It typically boasts notes of dried fruits like apricots, figs, and raisins, along with hints of vanilla, brown sugar, and sometimes a nutty or smoky undertone. It comes in both sweet and dry varieties; dry Marsala is generally preferred for savory cooking to provide depth without excessive sweetness.
If Marsala wine is unavailable or you prefer an alternative, a dry sherry can be a good substitute due to its similar nutty and rich characteristics. For a completely alcohol-free option, you could experiment with a few splashes of coconut aminos combined with a touch of grape juice or mushroom broth to mimic some of Marsala’s complexity. However, the unique flavor of Marsala is hard to perfectly replicate.
Since this dish already features hearty fettuccine, it can certainly stand alone as a complete meal. However, if you wish to add a fresh green vegetable component, simple steamed or roasted asparagus, green beans, or a light side salad with a vinaigrette dressing would pair beautifully. The freshness of these sides would perfectly complement the rich and creamy Marsala sauce.
The chicken and Marsala sauce can be prepared a day in advance and stored separately in the refrigerator. Reheat the sauce gently and then add the chicken to warm through. Cook the pasta fresh just before serving to ensure the best texture.
Yes, this recipe works well for meal prep! Prepare the chicken and sauce as directed. Once cooled, divide it into individual airtight containers. Cook the gluten-free pasta fresh when you’re ready to eat each portion, or store the pasta separately and mix just before reheating. Remember that gluten-free pasta holds up best when not pre-mixed with sauce for extended periods.

Non-stick pan: Using a non-stick pan is important to ensure the chicken doesn’t get stuck to the pan when you sear it.
