The Allure of Easy, Elegant Gluten-Free Desserts
Many of us adore cheesecake – its rich, creamy texture, the delicate tang, and the endless possibilities for customization. However, traditional cheesecakes can be notoriously time-consuming, often requiring specific baking techniques, water baths, and long cooling periods. What if you could capture that same delightful experience in a fraction of the time, and make it entirely gluten-free? Enter these spectacular Gluten-Free Cheesecake Sugar Cookie Cups – the perfect solution for a quick, impressive, and dietary-friendly dessert.
This recipe offers the best of both worlds: the comforting chewiness of a sugar cookie in a convenient cup form, paired with a dreamy, light, and tangy no-bake cheesecake filling. It’s a harmonious blend of textures and flavors that will undoubtedly become a staple in your dessert repertoire.

Crafting the Perfect Gluten-Free Sugar Cookie Base
The foundation of these cheesecake cups is a delightful gluten-free sugar cookie. Unlike traditional pie crusts or elaborate cookie bases, these cups are incredibly straightforward to create. You simply press the gluten-free sugar cookie dough into standard muffin tins. This method ensures a consistent shape and size, making them ideal for individual servings. The key is to bake them just until the edges turn a delicate golden brown, leaving the centers soft and pliable. This creates a tender, buttery “crust” that perfectly complements the creamy filling. The slight give in the cookie provides a wonderful contrast to the smooth cheesecake, making every bite a delightful experience.
Using a reliable gluten-free all-purpose flour blend is crucial here. Brands like Pillsbury Gluten Free flour are often recommended for their consistent results in baking. If your chosen blend doesn’t include xanthan gum, remember to add the specified amount, as it helps provide structure and elasticity to gluten-free baked goods, preventing crumbling.

The Magic of the No-Bake Cheesecake Filling
The star of the show, the no-bake cheesecake filling, is a testament to culinary simplicity and flavor. It’s wonderfully easy to prepare, requiring no oven time and minimal effort. A blend of cream cheese, powdered sugar, whipped topping, lemon juice, and pure vanilla extract comes together to create a filling that is exceptionally creamy, light, and perfectly balanced. The hint of lemon juice brightens the flavor profile, preventing it from being overly sweet and adding that classic cheesecake zest. Using room-temperature cream cheese is essential for achieving a lump-free, silky-smooth consistency. This ensures the filling pipes or spoons beautifully into your cookie cups.
Once the filling is prepared, it’s best to chill it briefly while your cookie cups cool. This allows the filling to firm up slightly, making it even easier to handle and ensuring a sturdy, delectable topping for your cookie bases. The combination of sweet cookie and tangy, cool cheesecake is simply irresistible, especially when topped with fresh, vibrant fruit.
Endless Topping Possibilities
Once your gluten-free sugar cookie cups are baked and cooled, and your no-bake cheesecake filling is ready, the fun truly begins with the toppings. These mini cheesecakes are incredibly versatile and can be adorned with almost anything your heart desires. Fresh berries – strawberries, blueberries, raspberries, or a mix – are classic choices, offering a burst of natural sweetness and a beautiful pop of color. For a more decadent touch, consider drizzling them with melted chocolate, caramel sauce, or a sprinkle of toasted nuts. Sliced peaches, kiwi, or even a dollop of additional whipped cream can elevate these simple treats into gourmet masterpieces. Don’t hesitate to get creative and personalize each cup to suit individual tastes or party themes!

Perfect for Any Celebration or Simple Indulgence
There’s something inherently charming about miniature desserts. They offer a “wow” factor that larger, sliced desserts sometimes lack, and they are incredibly convenient for serving. These gluten-free cheesecake sugar cookie cups are perfectly portioned, making them an ideal choice for any gathering, big or small. Imagine them gracing the dessert table at:
- Parties: Easy to grab and enjoy, minimizing mess and maximizing enjoyment.
- Bridal or Baby Showers: Their elegant presentation and customizable toppings make them a delightful addition to any themed event.
- Weddings: A fantastic alternative to traditional cake, offering individual portions and catering to gluten-free guests.
- Holiday Gatherings: A lighter, fresher option after a heavy meal.
- Everyday Treats: Simple enough to whip up for an afternoon pick-me-up or a family dessert.
One of the best aspects of this recipe is that it’s a naturally gluten-free dessert that truly tastes like a regular indulgence. You can serve these with confidence, knowing that even guests without gluten sensitivities will rave about them. Many won’t even realize they are gluten-free, which is always the ultimate compliment for any gluten-free baker!
Tips for Success & Troubleshooting
To ensure your Gluten-Free Cheesecake Sugar Cookie Cups turn out perfectly every time, keep these tips in mind:
- Room Temperature Ingredients: For both the cookie dough and the cheesecake filling, ensure your butter, shortening, cream cheese, and eggs are at room temperature. This helps them combine smoothly, preventing lumps and ensuring a uniform texture.
- Measure Gluten-Free Flour Correctly: Gluten-free flours can be tricky. Use the “spoon and level” method rather than scooping directly from the bag to avoid compacting the flour and adding too much.
- Don’t Overbake the Cookie Cups: Overbaking will make the cookie cups hard and crumbly. Aim for just golden edges and a soft center. They will firm up as they cool.
- Pressing the Centers: As the cookies cool, their centers might puff up. Gently pressing them down with the back of a spoon while they are still warm (but not hot) will create a deeper well for more cheesecake filling. This also helps shape them into perfect “cups.”
- Chilling the Filling: While the cookie cups cool, refrigerate the cheesecake filling. A slightly chilled filling is firmer and easier to spoon or pipe neatly into the cups.
- Piping vs. Spooning: For a neater, more professional look, use a piping bag with a star tip to fill your cookie cups. If you don’t have one, a spoon works just as well, though the finish might be a bit more rustic.
- Storage: Store the finished cheesecake sugar cookie cups in an airtight container in the refrigerator. They are best enjoyed within 3-4 days.

Ingredients
No-Bake Cheesecake Filling
- 16 oz cream cheese, 2 8oz packages, softened
- 2 cups powdered sugar
- 4 oz whipped topping, I used Cool-Whip (half of an 8oz container)
- 2 tablespoons lemon juice
- 2 teaspoons pure vanilla extract
- berries, for topping (or other preferred toppings)
Gluten-Free Sugar Cookies
- 1/2 cup vegetable shortening
- 3/4 cups granulated sugar
- 1/4 cup packed brown sugar
- 1 tablespoons milk
- 2 large eggs, room temperature
- 1 tablespoon pure vanilla extract
- 2 cups gluten-free all-purpose flour, (I like Pillsbury Gluten Free)
- 1/2 teaspoon xanthan gum, leave out if your flour blend already contains it
- 3/4 teaspoons baking soda
- 3/4 teaspoons cream of tartar
- 1/2 teaspoon salt
- gluten-free cooking spray
Instructions
Cheese Cake Filling:
-
Using a stand-up mixer or hand-held mixer, beat the cream cheese until completely smooth and fluffy.
-
Stop the mixer and add the powdered sugar, vanilla extract, and lemon juice. Mix on low speed until fully combined and the mixture is smooth and creamy. Scrape down the sides of the bowl as needed.
-
Gently fold in 4oz of the whipped topping (approximately half of an 8oz container) until fully incorporated and no streaks remain. Be careful not to overmix, as this can deflate the filling.
-
Refrigerate the cheesecake filling for at least 30 minutes, or until the cookie cups are completely cooled. This helps the filling firm up.
Sugar Cookie Cups:
-
Preheat your oven to 350 degrees Fahrenheit (175°C).
-
In a large bowl, combine the vegetable shortening, granulated sugar, and brown sugar. Beat at medium speed with an electric mixer until the mixture is well blended and creamy. Add the milk, then beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the pure vanilla extract.
-
In a separate large bowl, whisk together the gluten-free all-purpose flour, xanthan gum (if using), baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet shortening mixture, mixing until just combined and a soft, uniform dough forms. Be careful not to overmix.
-
Lightly spray a standard 12-cup muffin pan with gluten-free cooking spray.
-
Scoop approximately 1 heaping tablespoon of the sugar cookie batter into each muffin tin cavity.
-
Using the back of a tablespoon or your fingers, press the cookie dough firmly into the bottom and about two-thirds of the way up the sides of each muffin cavity. This will create a small “bowl” or cup for the filling.
-
Bake the cookie cups for 12-14 minutes, or until the edges are lightly golden brown. The centers should still be soft.
-
Immediately after removing from the oven, as the cookies begin to cool, you may need to gently push down the centers again with the back of a tablespoon to reinforce the cup shape, similar to mini pie crusts. This creates a nice deep well for the cheesecake filling.
-
Allow the sugar cookies to cool completely in the muffin pan before attempting to remove them. This is crucial to prevent them from breaking.
-
Once completely cooled, spoon or pipe the chilled cheesecake filling generously into each cookie cup.
-
Top with your preferred choice of fresh berries or other desired garnishes.
-
Serve immediately or keep refrigerated until ready to enjoy!
