Essential Ingredients for Your Paleo Vegan Berry Crisp

Crafting this crisp requires a selection of simple, yet impactful, ingredients that adhere to Paleo and Vegan principles. Each component plays a crucial role in achieving the perfect balance of flavor and texture. Here’s a detailed look at what you’ll need for both the luscious berry filling and the crunchy, golden topping:

For the Irresistible Berry Filling:

  • Berries: The star of the show! I love a mix of 5 cups of fresh strawberries (sliced), blackberries, blueberries, and raspberries. This combination offers a delightful range of tartness and sweetness. However, feel free to use any single berry or blend you prefer. Fresh berries are highly recommended for the best texture and flavor.
  • Lemon Juice: A splash of fresh lemon juice brightens the berry flavors and adds a zesty counterpoint to the sweetness.
  • Cinnamon: Just ½ tsp of ground cinnamon introduces a warm, comforting spice that beautifully complements the fruit.
  • Coconut Sugar or Maple Syrup: Two tablespoons of either of these natural sweeteners help to enhance the berries’ natural sugars without being overly sweet. Coconut sugar provides a caramel-like note, while maple syrup adds a distinct richness.
  • Arrowroot Powder or Tapioca Flour: One tablespoon of either acts as a fantastic grain-free thickener, ensuring your berry filling is perfectly jammy, not watery. If you’re not strictly Paleo, cornstarch can be used as a substitute, though arrowroot or tapioca flour are preferred for their neutral flavor and thickening power.

For the Crunchy Paleo Vegan Topping:

  • Almond Flour: ¾ cup of fine almond flour forms the base of our gluten-free, grain-free topping, providing a tender crumb.
  • Chopped Pecans: ½ cup of chopped pecans adds a wonderful crunch and rich, buttery flavor. If pecans aren’t your favorite, feel free to substitute with other nuts like walnuts, almonds, or even sunflower seeds for a nut-free option (ensure to check for cross-contamination if severe allergy is a concern).
  • Unsweetened Shredded Coconut: ⅓ cup of unsweetened shredded coconut contributes a subtle tropical note and a chewy texture to the topping.
  • Solid Coconut Oil: ¼ cup of solid coconut oil binds the topping ingredients together, creating that classic crisp texture. It’s crucial for the oil to be solid at room temperature for the best results. Ghee can be substituted if you’re not strictly vegan, but for a truly vegan crisp, stick with coconut oil.
  • Maple Syrup: One tablespoon of maple syrup adds a touch of sweetness and helps achieve a golden-brown finish.
  • Coconut Sugar: Two tablespoons of coconut sugar further sweeten the topping, contributing to its delicious caramelized flavor upon baking.
  • Sea Salt: Just ¼ tsp of sea salt balances all the flavors, making the sweetness pop.

For this particular recipe, I used a 7.5-inch x 10.5-inch baking dish. If you wish to use a larger 9×13-inch dish, I highly recommend doubling the entire recipe to ensure a generous and satisfying crisp.

This Berry Crisp is a delicious spring/summer fruity dessert with fresh berries and a grain free crumb topping! It is paleo and vegan.

Ingredients

Filling

  • 5 cups berries*, I used sliced strawberries, blackberries, blueberries, and raspberries
  • 1 tsp lemon juice
  • ½ tsp cinnamon
  • 2 tbsp coconut sugar or maple syrup
  • 1 tbsp arrowroot powder, can sub tapioca starch

Topping

  • ¾ cup almond flour
  • ½ cup chopped pecans, or any nut of choice
  • ⅓ cup shredded coconut, unsweetened
  • ¼ cup coconut oil in solid form, can sub ghee (not vegan)
  • 1 tbsp maple syrup
  • 2 tbsp coconut sugar
  • ¼ tsp sea salt

Instructions

  1. Preheat your oven to 375°F (190°C). In a large bowl, combine all of the filling ingredients (berries, lemon juice, cinnamon, coconut sugar or maple syrup, and arrowroot powder). Toss gently until the berries are evenly coated. Transfer this mixture to your 7.5×10.5 inch casserole dish (or appropriate size).
  2. To prepare the topping, add all of the topping ingredients (almond flour, chopped pecans, shredded coconut, solid coconut oil, maple syrup, coconut sugar, and sea salt) into a food processor. Pulse a few times until a chunky, granola-like consistency is formed. Alternatively, if you don’t have a food processor, you can finely chop the nuts by hand, then combine all topping ingredients in a bowl and mix them together using your hands or a fork until well combined and crumbly.
  3. Evenly spread the prepared topping mixture over the berry filling in the casserole dish.
  4. Bake for 30 minutes, or until the berry filling is bubbling around the edges and the topping has turned a beautiful golden brown.
  5. Remove from the oven and let it cool slightly before serving. Enjoy your warm, flavorful crisp with a scoop of your favorite dairy-free ice cream!

Notes

*I did experiment with frozen berries for this recipe, and while it worked, the crisp ended up being much more liquidy than with fresh berries. For the best texture and a less soupy result, fresh berries are definitely preferred!

Tips for a Flawless Paleo Vegan Berry Crisp

Achieving crisp perfection is easy with a few simple tricks:

  • Fresh vs. Frozen Berries: As noted in the recipe, fresh berries will yield a firmer filling. If using frozen berries, there’s no need to thaw them, but expect a slightly more liquidy crisp. You can try adding an extra half tablespoon of arrowroot powder to the filling to help absorb some of the excess moisture if using frozen fruit.
  • Baking Dish Size Matters: Using the recommended 7.5×10.5-inch dish ensures the crisp bakes evenly and the topping gets adequately crispy. If you opt for a larger dish, remember to double the recipe to prevent a thin, dry crisp.
  • Don’t Overmix the Topping: When processing or mixing the topping ingredients, aim for a coarse, crumbly texture. Overmixing can lead to a doughy topping rather than a light, crisp one.
  • Check for Bubbles: The bubbling sides of the crisp are your visual cue that the filling is hot and thick, and the fruit flavors have melded beautifully. A golden-brown topping signifies perfect crunch.
  • Rest Before Serving: While it’s tempting to dive in immediately, allowing the crisp to rest for 10-15 minutes after baking helps the filling set, making it easier to scoop and preventing it from being too runny.

Serving Suggestions to Elevate Your Dessert

While this Paleo Vegan Berry Crisp is absolutely delicious on its own, pairing it with certain accompaniments can take it to the next level:

  • Coconut Ice Cream: My personal favorite! A scoop of creamy coconut ice cream, like Luna and Larry’s Coconut Bliss Vanilla Island, melts into the warm crisp, creating a delightful contrast.
  • Vegan Whipped Cream: A dollop of homemade or store-bought coconut whipped cream adds a light, airy touch.
  • Dairy-Free Custard: A warm vegan custard poured over the crisp can make for an elegant and comforting dessert.
  • Fresh Mint: A sprig of fresh mint adds a pop of color and a refreshing aroma that complements the berries beautifully.
  • Plain & Simple: Sometimes, the pure flavors of the warm crisp are all you need. Enjoy it as is for a comforting treat.

Storage and Reheating Tips

This crisp is best enjoyed fresh from the oven, but leftovers are certainly delicious! Here’s how to store and reheat it:

  • Storage: Allow the crisp to cool completely before covering it tightly with plastic wrap or aluminum foil. Store it in the refrigerator for up to 3-4 days.
  • Reheating: For best results, reheat individual portions in the microwave for 30-60 seconds, or warm the entire dish in an oven preheated to 350°F (175°C) for 15-20 minutes, or until heated through and the topping is crisp again.
  • Freezing: You can freeze baked and cooled crisp for up to 3 months. Wrap it tightly in plastic wrap, then aluminum foil, and place it in a freezer-safe container. Thaw overnight in the refrigerator before reheating.

Frequently Asked Questions

Can I use other fruits besides berries?

Absolutely! This recipe is incredibly versatile. You can substitute the berries with other fruits like sliced apples, peaches, nectarines, plums, or a combination. Adjust the sweetness and thickener (arrowroot/tapioca) as needed, as some fruits release more liquid than others.

Is this recipe suitable for those with nut allergies?

This recipe uses almond flour and pecans in the topping. To make it nut-free, you can substitute the almond flour with an equal amount of oat flour (ensure it’s certified gluten-free if necessary) or a seed flour like sunflower seed flour. Replace the pecans with an equal amount of toasted sunflower seeds or pumpkin seeds for a similar crunch. Always check all ingredient labels to ensure they are free from cross-contamination if dealing with severe allergies.

Can I reduce the amount of sugar in the recipe?

Yes, you can certainly adjust the sweetness to your preference. Both the filling and topping use natural sweeteners. You can reduce the amount of coconut sugar and maple syrup by about 1-2 tablespoons in each section, depending on how sweet your berries are and your personal taste. Taste the berry mixture before baking to gauge its sweetness.

How do I know when the crisp is fully baked?

The crisp is ready when the berry filling is visibly bubbling around the edges of the dish, indicating it’s hot and thick. The topping should be golden brown and feel firm and crisp to the touch. If the topping browns too quickly, you can loosely tent it with aluminum foil for the last 10-15 minutes of baking.

My favorite vegan and gluten-free ice cream, Luna and Larry’s Coconut Bliss – Vanilla Island, is truly heavenly when paired with this warm berry crisp. The creamy, vanilla notes perfectly complement the tart and sweet berries, creating an unforgettable dessert experience. If you haven’t tried it, I highly recommend picking up a pint!
