Why You’ll Love This Healthy Sausage Gravy Recipe

Essential Ingredients for Your Healthy Gravy

A vibrant display of fresh ingredients for sausage gravy, including ground sausage, various spices, ghee, cassava flour, and almond milk, neatly arranged in nesting bowls.
Simple, wholesome ingredients are all you need for this delicious recipe.
  • Breakfast Sausage: Opt for high-quality breakfast sausage. If you’re following a Whole30 diet, be sure to select a brand with no added sugar. Butcher Box is an excellent source for quality meats. For individuals with Celiac disease or gluten intolerance, always double-check that your sausage is certified gluten-free, as some brands may include unexpected fillers or additives. Reading ingredient labels is always key!
  • Ghee: Ghee, clarified butter, offers a rich, buttery flavor while being dairy-free and suitable for paleo diets. If you need a strictly vegan option, feel free to substitute with your favorite plant-based or vegan butter.
  • Cassava Flour: This remarkable gluten-free flour is a fantastic alternative to traditional wheat flour for thickening gravy. It’s derived from the cassava root, making it naturally nut-free and suitable for those with nut allergies, unlike almond flour often used in keto recipes. You can typically find cassava flour in the baking aisle of most local grocery stores and specialty markets.
  • Almond Milk: Unsweetened almond milk provides the creamy base for this gravy. For a completely nut-free version or if you prefer a richer texture, full-fat canned coconut milk is an excellent alternative. Be sure to use unsweetened varieties to avoid unwanted sugars.
  • Chicken Broth: Chicken broth adds depth of flavor and helps achieve the perfect gravy consistency. Keep extra on hand, as you may need a little more to thin the gravy to your desired thickness. Kettle & Fire is a recommended brand for quality broth.
  • Aromatic Spices: A blend of dried sage, fennel seeds, dried thyme, and garlic powder creates the classic, comforting flavor profile of traditional sausage gravy. These spices perfectly complement the breakfast sausage.
  • Salt and Pepper: Essential for seasoning to taste. Always adjust quantities based on the saltiness of your sausage and personal preference.

How to Make Keto Sausage Gravy: A Step-by-Step Guide

Cooking the sausage to perfection is the first step to a flavorful gravy.
  1. Brown the Sausage: Begin by heating a large skillet, preferably a cast iron skillet for even heat, over medium heat. Add your breakfast sausage along with the dried sage and fennel seeds. Cook the sausage for 5-7 minutes, breaking it up with a wooden spoon as it cooks, until it’s beautifully browned and cooked through. Once done, remove the cooked sausage from the pan using a slotted spoon, leaving behind approximately 1 tablespoon of the flavorful sausage grease. This rendered fat is crucial for building the base of your gravy.

  1. Create the Roux: Into the pan with the reserved sausage grease, add 2 tablespoons of ghee (or vegan butter). Allow it to melt, then immediately whisk in the cassava flour. Whisk vigorously for about 1 minute until a smooth, thick paste, or roux, forms. This step is essential for a lump-free gravy.
  2. Whisk in Liquids and Spices: Without delay, pour in the almond milk and chicken broth. Continue whisking constantly over medium heat. The mixture will initially appear thin but will gradually begin to thicken as it heats. Add the dried thyme and garlic powder at this stage. Don’t be discouraged if it looks a bit lumpy at first; continuous, vigorous whisking is the key to achieving a silky-smooth consistency. Keep whisking until the gravy is smooth and has reached your desired thickness.

Combining the sausage and gravy for a cohesive, flavorful dish.
  1. Combine and Season: Return the cooked sausage to the pan with the gravy. Stir everything together and allow it to simmer for another couple of minutes, giving the flavors a chance to meld and deepen.
  2. Serve Immediately: Taste the gravy and season generously with salt and pepper as needed. Serve your delicious keto sausage gravy immediately over your favorite low-carb or gluten-free sides. It’s fantastic with keto biscuits, crispy air-fried potatoes, classic home fries, or our recommended gluten-free biscuits!

Expert Tips for Perfect Gravy Every Time

  • How to Thicken Your Gravy: If you find your gravy is too thin after simmering, you can easily thicken it. In a small bowl, combine one teaspoon of arrowroot powder, tapioca starch, or xanthan gum with 1 tablespoon of cold water to create a “slurry.” Stir this mixture into the simmering gravy and continue whisking for at least one minute. The gravy should visibly thicken. If it’s still not thick enough, repeat with another half teaspoon of thickener.
  • How to Thin Your Gravy: Should your gravy become too thick, gradually add small amounts of chicken broth, a tablespoon at a time, until you reach your desired pourable consistency. Whisk thoroughly after each addition to ensure it’s smooth and well combined.
  • Choosing the Right Sausage: The quality and flavor of your breakfast sausage will significantly impact the final taste of your gravy. Opt for a high-quality, flavorful sausage. If you can’t find a pre-seasoned breakfast sausage that meets your dietary needs, you can use plain ground pork and season it yourself with extra sage, fennel, salt, and pepper.

Frequently Asked Questions About Keto Sausage Gravy

Is sausage gravy high in carbs?

Traditional sausage gravy, made with wheat flour and cow’s milk, is indeed typically high in carbohydrates. However, this specially designed keto version is dramatically different. By using cassava flour and almond milk, our recipe significantly reduces the carb count, boasting only 4 grams of net carbs per serving, making it perfectly suitable for a keto or low-carb diet.

Is cornstarch suitable for a keto diet?

No, cornstarch is not considered keto-friendly. It is primarily made of carbohydrates and can quickly spike blood sugar levels, making it unsuitable for a ketogenic lifestyle. Fortunately, there are excellent low-carb alternatives for thickening sauces. Ingredients like tapioca starch, arrowroot powder, and xanthan gum are all keto-approved thickening agents. In this particular recipe, the cassava flour itself acts as an effective thickener, eliminating the need for additional agents.
