Crafting the Perfect Filling for Your Egg Cups

The journey to creating these delectable Sausage, Sweet Potato, and Kale Egg Cups begins with preparing the flavorful filling. For this crucial step, I highly recommend using a quality cast iron skillet, such as my trusty 12-inch Lodge Cast Iron skillet. Pre-cooking the filling ingredients before baking is absolutely essential; it ensures that your sweet potatoes become wonderfully tender, rather than remaining unpleasantly crunchy. This initial sauté also allows the flavors to meld beautifully, creating a richer, more satisfying base for your egg cups. In fact, this skillet mixture of sausage, sweet potato, and kale is so delicious on its own, it could easily serve as an amazing egg-free breakfast or side dish!

For this recipe, I specifically chose Jones Dairy Farm All Natural Little Pork Sausages. These sausages are a standout product for several compelling reasons: they are certified gluten-free, certified paleo, completely Whole30 compliant, and contain no added sugar. When it comes to taste, texture, and ingredient integrity, this brand consistently surpasses expectations and remains my top preference. A quick look at their ingredient list reveals their commitment to clean eating: simply pork, water, salt, spices, and a natural lamb casing. This simplicity means you’re getting pure flavor without unnecessary additives, making them an excellent choice for a healthy and delicious meal.

Assembling Your Egg Cups for Baking

Once your flavorful sausage, sweet potato, and kale filling has been perfectly sautéed and allowed to cool slightly, the next step is to distribute it evenly among your muffin cups. For egg cups, I cannot stress enough the benefits of using a silicone muffin pan. These pans are truly a game-changer, allowing your baked egg cups to effortlessly pop right out without any frustrating sticking, provided you lightly grease each cup with a bit of oil before adding the ingredients. Using a metal muffin pan, unfortunately, often leads to sticking and can make demolding your egg cups a real struggle, so silicone is highly recommended for the best results.

Next, it’s time to prepare the egg mixture. For easy and mess-free pouring, I find it incredibly helpful to whisk my eggs in a large Pyrex measuring cup. The spout makes neatly filling each muffin cup a breeze. Carefully pour the beaten egg mixture over the sausage, sweet potatoes, and kale in each cup, ensuring that the filling is covered but being mindful not to over-fill. Leave a small amount of space at the top of each cup to allow for the eggs to expand slightly during baking without overflowing.

Baking Perfection and Effortless Meal Prep

With your muffin pan filled, it’s time to transform these ingredients into perfectly baked egg cups. Slide the pan into your preheated oven and bake for approximately 18-20 minutes. The exact baking time may vary slightly depending on your oven, so keep an eye on them. You’ll know they are perfectly done when the eggs are fully set, firm to the touch, and no longer show any signs of being runny in the center. Once baked to perfection, these delightful egg cups are ready to be enjoyed immediately, offering a warm and savory start to your day.

Easy Storage and Reheating for Busy Weeks

One of the greatest benefits of these Whole30 and Paleo egg cups is their incredible meal-prep convenience. Once cooled, you can easily store them in an airtight container or a large ziplock bag in the refrigerator, where they will stay fresh for up to 4 days. This makes them an ideal choice for busy individuals and families who want a healthy breakfast option ready to go throughout the week, minimizing morning stress and maximizing nutritious choices. When you’re ready to enjoy them, reheating is a breeze: simply pop them into the microwave for 30-45 seconds until warmed through. For an extra burst of flavor, I love to drizzle some compliant ranch dressing over these savory egg cups, but a dollop of your favorite hot sauce or even some fresh avocado slices would also be fantastic!

Sausage, Sweet Potato, and Kale Egg Cups

By: Mary Smith
Prep: 10 minutes
Cook: 20 minutes
Total: 30 minutes
Yield: 12 cups
These egg muffins are stuffed with savory sausage, tender sweet potato, and nutrient-packed kale. They are the perfect make-ahead breakfast, compliant with both Whole30 and Paleo dietary guidelines, making healthy eating simple and delicious.

Ingredients

  • 1 12 oz package Jones Dairy Farm All Natural Little Pork Sausages, cut into ½ inch pieces
  • 2 tbsp olive oil, divided
  • 1 medium sweet potato, peeled and diced small
  • 2 cups kale, coarsely chopped, stems removed
  • 10 eggs
  • ½ tsp sea salt
  • 1 tbsp hot sauce, I like Frank’s Red Hot

Instructions

  • Preheat oven to 375°F (190°C). Prepare your silicone muffin pan by rubbing approximately 1 tablespoon of olive oil evenly into each cup (this prevents sticking better than spray). Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage pieces and cook, stirring occasionally, for 2-3 minutes until lightly browned. Incorporate the diced sweet potato and continue to cook for an additional 2-3 minutes, stirring, until it begins to soften. Finally, add the coarsely chopped kale to the skillet and stir for 1-2 more minutes, just until it wilts slightly. Remove the skillet from heat and let the mixture cool for a few minutes.
  • While the filling cools, beat the 10 eggs together in a large bowl. Add the ½ teaspoon of sea salt and 1 tablespoon of hot sauce (adjust to your preferred spice level). For easier pouring and to minimize mess when filling the muffin cups, I highly recommend using a large Pyrex measuring cup for this step. Whisk vigorously until the eggs are well combined and slightly frothy.
  • Evenly scoop the cooled sausage, sweet potato, and kale mixture into each prepared muffin cup, ensuring each cup has a generous and consistent amount of filling. Next, carefully pour the beaten egg mixture into each cup, filling them to slightly below the top to allow for expansion during baking.
  • Bake for 18-20 minutes, or until the eggs are completely set and firm to the touch, with no liquid remaining in the center. The edges may turn a light golden brown. Carefully pop the finished egg cups out of the silicone muffin pan and serve warm. These are delicious on their own or with a side of ranch dressing or compliant ketchup. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

To reheat, simply microwave for 30-45 seconds until thoroughly warmed.
