Why Choose Gluten-Free Oatmeal?

For individuals with gluten sensitivities, celiac disease, or those simply opting for a gluten-free lifestyle, ensuring your oats are certified gluten-free is paramount. While oats are naturally gluten-free, they are often processed in facilities that also handle wheat, barley, and rye, leading to cross-contamination. Opting for certified gluten-free oats, like Bob’s Red Mill, guarantees that your breakfast cups are safe and enjoyable for everyone.

Beyond being gluten-free, oats are a nutritional powerhouse. They are a fantastic source of soluble fiber, which is known to help lower cholesterol levels and promote healthy digestion. They also provide sustained energy, helping you feel fuller for longer and preventing those mid-morning energy crashes. Combined with other natural ingredients, these oatmeal cups offer a balanced and energizing meal.

The Benefits of a Make-Ahead Breakfast

In today’s fast-paced world, time is a precious commodity. A make-ahead breakfast like these baked oatmeal cups offers numerous advantages:

  • **Time-Saving:** Prepare a batch on the weekend, and your breakfasts are sorted for the entire week.
  • **Stress Reduction:** No more frantic morning cooking or scrambling for unhealthy alternatives.
  • **Portion Control:** Each cup is a perfectly portioned serving, making healthy eating easier.
  • **Cost-Effective:** Preparing meals at home is almost always more economical than buying breakfasts out.
  • **Nutrient-Rich:** You control the ingredients, ensuring your family gets wholesome, real food.

Flavor Spotlight: Apple Cinnamon, Blueberry, & Chocolate Chip

Let’s dive deeper into the delightful flavors featured in this recipe, along with suggestions for more creative mix-ins:

  • Apple Cinnamon: The classic combination of sweet apples and warm cinnamon creates a comforting and aromatic experience. Use finely diced apples for the best texture, and a dash of nutmeg can further enhance the cozy flavor. Consider adding a few chopped walnuts or pecans for extra crunch and healthy fats.
  • Blueberry: Bursting with natural sweetness and antioxidants, blueberries are a fantastic addition. Both fresh and frozen blueberries work wonderfully. If using frozen, there’s no need to thaw them beforehand; just fold them into the batter. A hint of lemon zest can brighten the blueberry flavor beautifully.
  • Chocolate Chip: For those who love a touch of indulgence, mini chocolate chips are a perfect choice. They melt slightly during baking, creating pockets of gooey chocolate goodness. Dark chocolate chips can add a richer flavor and a boost of antioxidants. For an extra treat, try a sprinkle of coconut flakes.

Other Mix-In Ideas:
Consider adding mashed pumpkin puree with pumpkin spice for a seasonal twist, shredded carrots with a touch of ginger for a morning boost, or even a spoonful of peanut butter or almond butter for added protein and richness. Chia seeds or flax seeds can also be incorporated for extra fiber and omega-3s.

Baked Oatmeal Cups 3 Ways | www.mamaknowsglutenfree.com

Baked oatmeal cups are a super easy, make-ahead, and freezable healthy breakfast. A tasty and healthy grab-and-go breakfast to start your day.

Ingredients

  • 2 cups gluten-free oatmeal (we recommend Bob’s Red Mill gluten-free quick oats)
  • 2 large bananas, mashed
  • 2 eggs, whisked
  • 1 tablespoon cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup milk (dairy or non-dairy, unsweetened coconut milk works great)
  • 1/4 cup of honey
  • 1 tablespoon of pure vanilla extract
  • 1 cup of desired filling: mini chocolate chips, fresh or dried blueberries, or chopped apples

Instructions

  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Spray muffin tins generously with a gluten-free cooking spray or line them with paper muffin liners.
  3. In a large bowl, mash the bananas until smooth.
  4. Add the whisked eggs, pure vanilla extract, and honey to the mashed bananas. Stir thoroughly to combine all the wet ingredients.
  5. Next, add the gluten-free oatmeal, salt, and cinnamon to the wet mixture. Stir until everything is well combined and the oats are moistened.
  6. Pour in the milk (dairy or non-dairy) and continue to stir until the batter is fully combined and smooth.
  7. Now, add your chosen filling: 1/2 cup of mini chocolate chips, fresh or dried blueberries, or chopped apples to the batter. Gently stir to evenly distribute the mix-ins. If using chopped apples, sprinkle them with a little extra cinnamon and stir to coat before adding them to the batter. A teaspoon of lemon juice can also be added to the apples and cinnamon mixture to prevent browning and add a bright flavor.
  8. Scoop the batter into the prepared muffin tins, filling each cup about two-thirds full. Top each cup with the remaining 1/2 cup of your chosen filling (chocolate chips, blueberries, or apples) for an attractive presentation and extra flavor.
  9. Bake for 20 minutes, or until the oatmeal cups are set and lightly golden brown. A toothpick inserted into the center should come out clean.
  10. Let them cool slightly in the muffin tin before transferring to a wire rack. Enjoy them warm or at room temperature!

Notes

Always double-check your ingredient labels to ensure they are certified gluten-free, especially oats and any processed mix-ins.

These oatmeal cups can be made ahead of time and stored. Keep them in an airtight container in the fridge for up to 5 days, or freeze them for up to 3 months. To reheat from frozen, simply microwave for 1-2 minutes or bake in a preheated oven at 350°F (175°C) for 10-15 minutes until warmed through.
